Description

This aromatic coconut vegetable soup is an absolute highlight! I especially like to make it when it's cold outside, because the slight spiciness and exotic spices warm you up wonderfully from the inside. The soup is super quick to prepare and can be easily varied with different types of vegetables. Carrots, spring onions and mushrooms are a perfect match, but broccoli or peppers are also a delicious addition. A dash of lemon juice rounds off the taste and ensures a fresh note. Perfect as a light meal or starter!

Ingredients (15 ingredients)

  • 3 Stängel Lemongrass
  • 30 g Ginger
  • 1 piece Chili pepper red
  • 2 tbsp Curry paste red
  • 400 ml Coconut milk
  • 600 ml Vegetable broth
  • 2 tbsp Soy sauce
  • 0.5 tsp Salt
  • 2 tsp Coriander
  • 1 tsp Turmeric
  • 1 etwas Lemon juice
  • 2 piece Carrot
  • 3 piece Spring onion
  • 100 g Mushrooms
  • 1 Blatt Bay leaf

Preparation (9 steps)

Prepare ginger, lemongrass and chili

Peel 30 g ginger and cut into small pieces. Flatten 3 stalks of lemongrass. Halve and core 1 red chili pepper. Put everything together with 1 bay leaf in the mixing bowl.

Sauté ingredients

Sauté the prepared ingredients in the mixing bowl for 3 min./120°C/level 1.

Add curry paste and simmer

Add 2 tbsp red curry paste and continue to simmer for 1 min./120°C/level 1.

Cook soup

Add 400 ml coconut milk and 600 ml vegetable broth to the mixing bowl and simmer for 12 min./100°C/level 1.

Season soup

Add 2 tbsp soy sauce, 0.5 tsp salt, 2 tsp coriander, 1 tsp turmeric and stir for 10 sec./level 3.

Prepare vegetables

While the soup is cooking, cut 2 carrots into sticks, 3 spring onions into rings and 100 g mushrooms into thin slices.

Remove flavors

Use a spatula to remove the lemongrass stalks, chili pepper and bay leaf from the soup.

Add vegetables and simmer

Add the chopped vegetables to the mixing bowl and gently simmer for 5 min./100°C/reverse rotation level 1.

Season the soup with some lemon juice and serve.
