Description

This creamy potato soup with leek is a real soul warmer! I especially like to make it in autumn when it gets colder outside. The combination of potatoes, leek and carrots makes the soup nice and creamy and aromatic. A dash of white wine provides a fine acidity, which can easily be replaced by vegetable broth if children are eating. Fresh herbs, nutmeg and grated cheese then perfectly round off the soup. A really simple and delicious dish that is quick to prepare and tastes good to the whole family!

Ingredients (15 ingredients)

  • 800 g Potatoes, predominantly waxy
  • 2 piece Onions, small
  • 1 clove Garlic cloves
  • 200 g Leek
  • 300 g Carrots
  • 1 l Vegetable broth
  • 200 ml White wine, dry
  • 40 g Butter
  • 2 tsp mixed herbs, dried spice
  • to taste Nutmeg, freshly grated
  • to taste Salt
  • to taste Pepper
  • Chives
  • Cress
  • to taste finely grated Emmentaler

Preparation (9 steps)

Prepare potatoes, onions and garlic

Peel 800g potatoes and cut into small cubes. Peel and quarter 2 onions. Peel 1-2 garlic cloves.

Chop onions and garlic

Place the quartered onions and garlic cloves in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onions and garlic

Add 40g butter to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add potatoes and sauté briefly

Add the diced potatoes to the mixing bowl and sauté for 2 min./120°C/speed 1.

Deglaze with wine and broth and simmer

Add 200ml white wine and 1 liter vegetable broth to the mixing bowl and simmer for 15 min./100°C/speed 1.

Prepare carrots and leek

Meanwhile, peel 300g carrots and cut into small cubes. Clean 200g leek and cut into fine strips.

Purée soup

30 sec/Speed 8-10

After the time has elapsed, purée the soup for 30 sec./speed 8-10, increasing the speed slowly.

Add leek, carrots and herbs and cook until done

Add the sliced carrots, leek and 2 tsp mixed herbs to the mixing bowl and simmer for a further 8 min./100°C/Reverse speed speed 1.

Season and serve soup

Season the soup with salt, pepper and freshly grated nutmeg. Serve with chives, cress and grated Emmentaler.
