Dieses Rezept für Schweinemedaillons mit Kartoffel-Sellerie-Salat ist ein leichtes und dennoch sättigendes Gericht, das sich perfekt für ein schnelles Mittag- oder Abendessen eignet. Die Kombination aus zartem Schweinefleisch, würzigem Parmaschinken und einem erfrischenden Kartoffelsalat mit Sellerie, Joghurt und Gewürzgurken ist einfach köstlich. Ich mache es gerne, wenn es schnell gehen muss, aber ich trotzdem etwas Gesundes und Schmackhaftes auf den Tisch bringen möchte. Der Balsamico-Essig verleiht dem Fleisch eine schöne Süße, die wunderbar mit dem salzigen Schinken harmoniert. Ein absolutes Lieblingsrezept, das bei mir immer gut ankommt!

Ingredients (12 ingredients)

  • 175 g new potatoes
  • 3 piece celery
  • 3 tbsp bio yogurt
  • 2 piece gherkins
  • 0.25 tsp caraway seeds
  • 0.5 tsp Dijon mustard
  • 2 piece lean pork
  • 2 tsp chopped sage
  • 2 slice Parma ham
  • 1 tsp rapeseed oil
  • 2 tsp balsamic vinegar
  • 2 handfuls salad leaves

Preparation (5 steps)

Potatoes and celery preparation

Thermomix® Setting
8 min/212°F/Speed 1 100

Place 175g new potatoes and 3 celery stalks into the mixing bowl. Add 500ml water. Place the simmering basket into the mixing bowl. Cook for 8 min/100°C/speed 1. Drain the potatoes and celery and set aside to cool slightly.

Potato salad dressing preparation

Place 3 tbsp bio yogurt, 2 gherkins, ¼ tsp caraway seeds and ½ tsp mustard into a bowl and mix well. Add the cooked potatoes and celery and stir to combine. Set aside.

Pork preparation

Bash the 2 x 100g pieces lean pork with a rolling pin to flatten them. Sprinkle over 2 tsp chopped sage and some pepper, then top each with a slice of Parma ham.

Cooking the pork

Heat 1 tsp rapeseed oil in a non-stick pan, add the pork and cook for a couple of mins each side, turning carefully. Add 2 tsp balsamic vinegar and let it sizzle in the pan.

Serving

Serve the pork with the potato salad and 2 handfuls salad leaves on the side.
