Description

This vegan without-liver-sausage is a hearty and aromatic spread, which is ideal as an appetizer or finger food. The combination of kidney beans, smoked tofu, apple and onions provides a unique taste. With a preparation time of about 30 minutes, this spread is quick to prepare and is perfect for a quick lunch or as a snack in between.

Ingredients (9 ingredients)

  • 1 piece Onion
  • 0.5 piece medium-sized apple
  • 30 g Olive oil
  • 225 g black or kidney beans from the can (drained weight)
  • 175 g Smoked tofu
  • 4 tsp dried marjoram
  • 0.5 tsp sweet paprika powder
  • 0.25 tsp Smoked salt (alternatively smoked paprika powder)
  • 0.25 tsp black pepper from the mill

Preparation (7 steps)

Prepare onion and apple

Peel and halve 1 onion. Wash, core and quarter ½ medium-sized apple.

Chop onion

Put the halved onions in the mixing bowl and chop for 3 sec./level 5.

Sauté onion and apple

Add 10 g olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1. Then transfer to a bowl and set aside.

Prepare beans and tofu

Drain 225 g black or kidney beans from the can in a sieve. Roughly dice 175 g smoked tofu.

Puree beans and tofu

30 sec/Speed 8

Put the drained beans, the diced tofu, 20 g olive oil, 4 tsp dried marjoram, ½ tsp sweet paprika powder, ¼ tsp smoked salt and ¼ tsp black pepper from the mill together with 3 tbsp water in the mixing bowl and puree for 30 sec./level 8. If necessary, add a little more water to achieve the desired consistency.

Refine bean mixture

Fill the bean mixture into a bowl. Fold in the sautéed apple/onion mixture and season with pepper and smoked salt to taste.

Store

Store the finished without-liver-sausage in the refrigerator.
