Description

This orzo pasta salad with shrimp is a delightful and refreshing dish, perfect for a light lunch or a summer gathering. I've been making this salad for years, and it's always a hit! The combination of tender orzo pasta, succulent shrimp, and a zesty herb dressing is simply irresistible. It's quick to prepare, making it ideal for busy weeknights, and it can be made ahead of time, allowing the flavors to meld together beautifully. Feel free to add other vegetables like cucumber or bell peppers for extra crunch and color. This salad is a fantastic way to enjoy a healthy and flavorful meal!

Ingredients (11 ingredients)

  • 12 piece large shrimp - peeled, deveined, and tails left on
  • 1 tbsp all-purpose seasoning blend
  • 0.5 cup uncooked orzo pasta
  • 1 tbsp mayonnaise
  • 1 tbsp chopped fresh dill, or to taste
  • 1 tbsp chopped fresh parsley, or to taste
  • 1 tbsp chopped fresh basil, or to taste
  • 1 tsp prepared yellow mustard
  • 0.25 tsp lemon juice
  • 1 pinch salt and ground white pepper to taste
  • 1 cup cherry tomatoes, halved

Preparation (4 steps)

Cook the Shrimp

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 12 large shrimp (peeled, deveined, and tails left on) and 1 tbsp all-purpose seasoning blend to the mixing bowl. Cook for 5 Min./100°C/Stufe 1. Remove the shrimp from the mixing bowl and set aside in a bowl.

Cook the Orzo Pasta

Thermomix® Setting
10 min/212°F/Speed 1 100

Add ½ cup uncooked orzo pasta to the mixing bowl with the seasoned water. Cook for 10 Min./100°C/Stufe 1. Drain the orzo and add it to the bowl with the shrimp. Store in the refrigerator to cool.

Prepare the Dressing

Combine 1 tbsp mayonnaise, 1 tbsp chopped fresh dill, 1 tbsp chopped fresh parsley, 1 tbsp chopped fresh basil, 1 tsp prepared yellow mustard, ¼ tsp lemon juice, and 1 pinch salt and ground white pepper to taste in a bowl. Mix well. Taste and adjust if needed. No Thermomix settings are needed for this step.

Combine and Chill

Remove the shrimp and orzo from the refrigerator. Add 1 cup halved cherry tomatoes and the prepared dressing to the mixing bowl. Mix well for 20 Sek./Stufe 2. Taste and adjust seasonings if necessary. Refrigerate for at least 2 hours before serving.
