Description

These cinnamon rolls with cream cheese frosting are an absolute delight, especially in the cold season! The fluffy dough, the warming cinnamon filling and the creamy frosting make them an irresistible treat. I especially like to bake them on the weekend for an extensive breakfast or a cozy brunch with friends and family. The preparation is a bit time-consuming, but the result is worth every minute. A tip: They taste best lukewarm! Thanks to the Thermomix®, the dough is very easy to make and the frosting is prepared in no time.

Ingredients (15 ingredients)

  • 200 g Butter (room temperature)
  • 250 ml Milk (whole milk)
  • 500 g Wheat flour Type 405
  • 1 Pck. Dry yeast
  • 50 g Sugar
  • 1 Pck. Bourbon vanilla sugar
  • 1 Prise(n) Salt
  • 1 piece Egg (size M)
  • 150 g Brown sugar
  • 2 tbsp Cinnamon
  • 100 g Cream cheese
  • 150 g Icing sugar
  • 1 tsp Vanilla extract
  • Flour for the work surface
  • Butter for the mold

Preparation (9 steps)

Melt butter and heat milk

Put 75 g butter in the mixing bowl and melt for 3 min./50°C/speed 1. Transfer and set aside. Put 250 ml milk in the mixing bowl and heat for 3 min./37°C/speed 1.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Put 500 g wheat flour, 1 pack dry yeast, 50 g sugar, 1 pack Bourbon vanilla sugar and 1 pinch of salt in the mixing bowl. Knead for 3 min./kneading stage to a smooth dough. Add the lukewarm milk and the melted butter as well as 1 egg.

Let the dough rise

Transfer the dough to a bowl, cover and let rise in a warm place for approx. 1.5 hours until it has roughly doubled in volume. The Thermomix is not required for this step.

Prepare filling and roll out dough

After the rising time, grease a rectangular baking tin (approx. 23 x 33 cm) with butter. Roll out the dough on a floured work surface to form a rectangle (approx. 40 x 30 cm). Mix 150 g brown sugar with 2 tbsp cinnamon in a bowl. The Thermomix is not required for this step.

Shape cinnamon rolls

Spread the dough evenly with 75 g of the soft butter and sprinkle with the cinnamon sugar. Roll up the dough from the long side. Cut the long roll into 12 equally thick slices and place them in the prepared mold with one of the cut sides facing up. Leave some space between each, as the rolls will rise significantly. Cover the mold and let the rolls rise again for approx. 45 minutes. The Thermomix is not required for this step.

Preheat oven

Shortly before the end of the rising time, preheat the oven to 180 °C (top/bottom heat). The Thermomix is not required for this step.

Bake cinnamon rolls

Bake the cinnamon rolls in the hot oven for 20–25 minutes until golden brown. The Thermomix is not required for this step.

Prepare frosting

20 sec/Speed 4

While the rolls are in the oven, put 100 g cream cheese, 50 g butter, 150 g icing sugar and 1 tsp vanilla extract in the mixing bowl and stir for 20 sec./speed 4 to a smooth cream. Add a little milk if necessary.

Apply frosting and serve

Take the cinnamon rolls out of the oven and spread with the frosting after 5 minutes. Best served lukewarm. The Thermomix is not required for this step.
