Description

This aromatic chicken broth is a real treat! I especially like to make it when it's cold outside. The combination of tender chicken, fresh ginger and crunchy vegetables makes this soup a true comfort food. The preparation is very simple and the Thermomix® does almost all the work. The soup is perfectly rounded off with a touch of sesame oil and a beaten egg. Ideal as a light lunch or warming appetizer. If you like it spicier, feel free to add some more Sambal Oelek.

Ingredients (13 ingredients)

  • 2 piece small Chicken drumsticks
  • 3 cm Ginger root fresh
  • 0.5 Salt
  • 2 Spring onion(s) cut into rings
  • 3 Mushrooms diced small
  • 50 g Bamboo shoot(s) diced small or julienned
  • 50 g Soybean sprouts cut small
  • 0.5 tsp Sambal Oelek or more to taste
  • 0.5 l Water
  • 1 tsp Oyster sauce
  • 0.5 tsp Sesame oil
  • 1 Egg(s) whisked
  • 3 tbsp Soy sauce or more to taste

Preparation (6 steps)

Prepare chicken broth

Thermomix® Setting
30 min/212°F/Speed 1 100

Add 500 ml Water, 0.5 Salt, 3 cm Ginger root and 2 small Chicken drumsticks to the mixing bowl and cook for 30 Min./100°C/level 1.

Prepare meat

After the time has elapsed, remove the Chicken drumsticks from the mixing bowl and remove the meat from the bone. Remove the ginger and set the meat aside.

Refine soup

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 3 tbsp Soy sauce, 1 tsp Oyster sauce and 0.5 tsp Sambal Oelek to the broth in the mixing bowl and cook for 3 Min./100°C/level 1.

Add vegetables and meat

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Add 50 g Bamboo shoots, 50 g Soybean sprouts, 3 Mushrooms and 2 Spring onions cut into rings, as well as the chicken meat, to the mixing bowl and heat for 2 Min./100°C/Reverse level 1.

Stir in egg

Thermomix® Setting
1 min/212°F/Linkslauf Speed 1 100 Reverse

Slowly pour 1 whisked Egg into the mixing bowl while the Thermomix is running on 1 Min./100°C/Reverse level 1 to create fine strands.

Serve

Fill the soup into bowls and drizzle with 0.5 tsp Sesame oil.
