Description

This Oaxacan mole chicken is a traditional Mexican dish that I always prepare at home. The mole, with its complex and slightly spicy flavor, combines perfectly with the tender chicken. The recipe is simple, although it requires a little patience to dissolve the mole paste well. Ideal for a family meal or a special celebration. The aroma it gives off while cooking is simply irresistible! It can be accompanied with white rice and corn tortillas. A comforting and flavorful dish.

Ingredients (7 ingredients)

  • 7 piece chicken thighs
  • 3 piece chicken legs
  • 1 kilo Oaxacan mole paste
  • 2.5 container chicken broth
  • 1 clove garlic
  • 1 piece onion
  • 1 pinch salt

Preparation (4 steps)

Cook the chicken

Thermomix® Setting
30 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Place the thighs (7 units) and chicken legs (3 units) in the Thermomix bowl. Add water to cover the meat, a clove of garlic and a piece of onion. Season with salt to taste. Program 30 Min./100°C/Reverse rotation/Spoon speed.

Reserve the cooked chicken

Once the chicken is cooked, remove from the bowl and place in a separate container. Reserve the cooking broth.

Dissolve the mole paste

Thermomix® Setting
5 min/194°F/Velocidad 3 90

Pour 2.5 cups of reserved chicken broth into the Thermomix bowl. Add 1 kg of Oaxacan mole paste. Program 5 Min./90°C/Speed 3. Make sure the mole paste dissolves completely. If necessary, use the spatula to help integrate the paste.

Incorporate the chicken and cook

Thermomix® Setting
5 min/194°F/Giro inverso/Velocidad cuchara 90 Reverse

Add the cooked chicken to the bowl with the dissolved mole. Program 5 Min./90°C/Reverse rotation/Spoon speed so that the chicken is well impregnated with the flavor of the mole.
