Description

These sweet potato and cheese croquettes are a delicious and comforting snack, perfect for any occasion! The sweetness of the sweet potato is wonderfully balanced with the cheese, creating a flavor combination that delights young and old. I often prepare them in the autumn, when the sweet potatoes are at their best, and they are always a hit at Christmas parties. They are very easy to make, although they require a little time for cooking and breading. But the end result is worth it! You can also prepare them in advance and fry them just before serving. A vegetarian appetizer that does not disappoint!

Ingredients (8 ingredients)

  • 2 piece sweet potato or yam
  • 120 gramos edam cheese
  • 1 pinch salt
  • 1 pinch nutmeg
  • 1 huevo egg
  • 1 cup breadcrumbs
  • 1 cup flour
  • 400 mililitros olive oil

Cooking the sweet potato

Peel and cut the sweet potatoes into cubes. Place the sweet potato cubes in the Thermomix bowl. Add water to cover the sweet potatoes. Cook for 25 Min./100°C/Stufe 1.

Sweet potato puree

Thermomix® Setting
20 sec/Speed 4

Drain the cooked sweet potatoes well. Place the drained sweet potatoes in the Thermomix bowl. Add a pinch of salt and a pinch of nutmeg. Chop for 20 Sek./Stufe 4. Lower the remains from the walls of the bowl with the spatula and chop 10 Sek./Stufe 5.

Mixing the puree with the cheese

Pour the sweet potato puree into a large bowl. Cut the cheese into small pieces and add it to the sweet potato puree. Mix well with a spatula until the cheese is evenly distributed.

Form the croquettes

With your hands, take portions of the sweet potato and cheese mixture and shape them into croquettes. Place the croquettes on a tray.

Breading the croquettes

Prepare three plates: one with flour, another with the beaten egg and another with the breadcrumbs. Pass each croquette first through the flour, then through the beaten egg and finally through the breadcrumbs, making sure they are well covered.

Frying the croquettes

Heat the olive oil in a large frying pan over medium-high heat. Fry the breaded croquettes in the hot oil until golden brown on all sides. Remove the croquettes from the pan and place them on absorbent paper to remove excess oil.
