Description

This Panna Cotta with blueberry compote is a real treat! The creamy consistency of the Panna Cotta harmonizes perfectly with the fruity, slightly sour blueberry compote. I especially like to make this dessert in the summer when the blueberries are in season. It is not only an eye-catcher, but also relatively easy to prepare, especially with the Thermomix®. Preparation is quick, but you should definitely plan for the cooling time. A great dessert for birthdays or just because!

Ingredients (6 ingredients)

  • 3 Blatt Gelatin
  • 1 piece Vanilla Bean
  • 400 g Whipping Cream
  • 4 tbsp Sugar
  • 600 g Frozen Blueberries
  • 2 tsp Cornstarch

Preparation (11 steps)

Soak gelatin

Soak 3 sheets of gelatin in cold water. Perform this step without a Thermomix.

Boil cream

Thermomix® Setting
5 min/194°F/Speed 1 90

Cut the vanilla bean lengthwise and scrape out the pulp. Add vanilla pulp, vanilla bean, 400 g whipping cream and 2 tbsp sugar to the mixing bowl and cook for 5 min./90°C/speed 1.

Let cream cool

Let the cream cool in the mixing bowl for 5 minutes.

Dissolve Gelatin

Thermomix® Setting
20 sec/Speed 2

Remove the vanilla bean from the mixing bowl. Squeeze out the soaked gelatin and dissolve in the hot cream in the mixing bowl for 20 sec./speed 2.

Refrigerate Panna Cotta

Pour the Panna Cotta into a rectangular mold (approx. 1 l capacity) or four small molds (à approx. 250 ml capacity) and refrigerate for at least 4 hours, preferably overnight. Perform this step without a Thermomix.

Boil blueberries

Thermomix® Setting
5 min/212°F/Speed 1 100

Add half of the frozen blueberries (300 g) and 2 tbsp sugar to the mixing bowl and cook for 5 min./100°C/speed 1.

Pass blueberry juice

Strain the blueberries through a fine sieve and collect the juice. Perform this step without a Thermomix.

Stir starch

Stir 2 tsp cornstarch and 2 tbsp cold water until smooth. Perform this step without a Thermomix.

Thicken blueberry juice

Thermomix® Setting
3 min/212°F/Speed 2 100

Add the collected blueberry juice to the mixing bowl and cook for 3 min./100°C/speed 2. Add the stirred starch and stir in for 10 sec./speed 3.

Simmer blueberries

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add the remaining blueberries (300 g) to the mixing bowl and stir in for 3 min./100°C/Reverse speed 1. Season with sugar.

Arrange

Turn the Panna Cotta out of the mold and cut into slices. Arrange on the blueberry compote. Vanilla ice cream tastes good with it. Perform this step without a Thermomix.
