Description

These little cream puffs are simply irresistible! Filled with a creamy vanilla cream and topped with a rich chocolate sauce, they are the perfect dessert for special occasions or just for enjoyment. I especially like to make them when visitors come, because they can be prepared well in advance and are always an eye-catcher. The combination of the delicate choux pastry, the creamy filling and the fruity strawberry sauce is simply heavenly. An absolute must for all those with a sweet tooth!

Ingredients (15 ingredients)

  • 125 ml Milk
  • 1 pinch Salt
  • 75 g Butter
  • 200 g Flour
  • 6 piece Eggs (size M)
  • 1 piece scraped pulp of 1 vanilla bean
  • 150 g Crème fraîche
  • 75 g Sugar
  • 2 tbsp Sugar
  • 650 g Whipping cream
  • 100 g Whipping cream
  • 50 g Cocoa powder
  • 100 g Sugar
  • 500 g Strawberries
  • 3 Stiele Mint

Preparation (13 steps)

Prepare choux pastry

Thermomix® Setting
5 min/212°F/Speed 1 100

Put milk, 125 ml water, 1 pinch of salt and butter into the mixing bowl and bring to the boil for 5 min./100°C/speed 1.

Stir in flour

Thermomix® Setting
30 sec/Speed 4

Add flour all at once and mix for 30 sec./speed 4 until the dough comes away from the bottom of the mixing bowl as a lump.

Let the dough cool and incorporate the eggs

Thermomix® Setting
20 sec/Speed 3

Put the dough in a bowl and stir in 1 egg immediately. Let cool for 10 minutes. Then put the dough back into the mixing bowl and add the remaining eggs one at a time. Stir in each egg for 20 sec./speed 3.

Shape and bake cream puffs

Put the choux pastry in a piping bag with a large star nozzle. Line 2 baking trays with baking paper. Pipe approx. 12 tufts onto each. Bake one tray at a time in a preheated oven (electric oven: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for approx. 20 minutes. Do not open the oven during baking! Remove and leave to cool.

Prepare vanilla cream

20 sec/Speed 3

Put vanilla pulp, crème fraîche and 75 g sugar into the mixing bowl and mix for 20 sec./speed 3.

Whip and fold in cream

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly. Put 650 g cream into the mixing bowl and whip until stiff for 2 min./speed 3.5. Remove butterfly. Gently fold in the vanilla cream.

Fill and freeze cream puffs

Halve the cream puffs horizontally with a serrated knife, but do not cut all the way through. Carefully fill the cream puffs with vanilla cream using a spoon. Freeze for at least 2 hours.

Prepare chocolate sauce

5 min/212°F/Speed 1 100

Put 125 ml water, 100 g sugar and 1 pinch of salt into the mixing bowl and bring to the boil for 5 min./100°C/speed 1.

Stir in cocoa

Thermomix® Setting
20 sec/Speed 3

Add cocoa powder and mix for 20 sec./speed 3.

Stir in cream

Thermomix® Setting
10 sec/Speed 2

Add 100 g cream and stir in for 10 sec./speed 2. Leave to cool.

Prepare strawberries

Wash, clean and chop the strawberries. Mix with 2 tablespoons of sugar and set aside.

Prepare mint

Wash the mint, shake dry and pluck the leaves.

Serve

Remove the cream puffs from the freezer approx. 30 minutes before serving. Sprinkle strawberries with mint. Serve cream puffs with chocolate sauce and strawberries.
