Description

This grilled corn and tomato salad is a vibrant and flavorful dish perfect for summer gatherings. Ingredients (14 ingredients)

  • 3 piece corn on the cob, shucked
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • 2 cups small heirloom tomatoes, chopped
  • 0.5 piece medium red onion, diced
  • 0.25 cup basil leaves, roughly chopped
  • 0.25 cup olive oil
  • 2 tbsp vinegar
  • 1 tsp minced garlic
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Preparation (6 steps)

Prepare the corn

Brush 3 ears of corn on the cob, shucked, with 1 tbsp olive oil. In a small bowl, combine ½ tsp salt, ½ tsp black pepper, ½ tsp garlic powder, and ½ tsp Italian seasoning. Sprinkle the mixture evenly over the corn. Place the seasoned corn on a 12x12-inch piece of foil.

Grill the corn

Place the foil with the corn on a preheated grill over medium heat and cook for 10 to 12 minutes, turning occasionally until the kernels begin to char. Remove from heat and let cool slightly.

Cut corn kernels

Once the corn is cool enough to handle, carefully slice the kernels off of the cob using a knife. Set aside.

Prepare the salad

In a medium bowl, combine the sliced corn kernels, 2 cups chopped heirloom tomatoes, ½ medium diced red onion, and ¼ cup roughly chopped basil leaves. Set aside.

Prepare the dressing

Thermomix® Setting

Add ¼ cup olive oil, 2 tbsp vinegar, 1 tsp minced garlic, ¼ tsp salt, and ¼ tsp black pepper to the Thermomix bowl. Mix for 10 seconds/speed 3.

Dress the salad

Pour the dressing from the Thermomix bowl over the corn and tomato salad. Toss gently to coat all ingredients evenly. Serve immediately.
