Description

This recipe combines savory falafel with a fresh pea hummus. The falafel are made from chickpeas, zucchini and herbs and fried until golden brown. The hummus consists of peas, garlic, mint and chili. The dish is vegan, vegetarian and is good as a main course or snack. The preparation time is about 60 minutes for 4 servings.

Ingredients (17 ingredients)

  • 1 can Chickpeas
  • 1 piece Onion
  • 1 piece Clove of garlic
  • 1 slice Toast bread
  • 0.5 piece Zucchini
  • 1 tsp Ground cumin
  • 0.5 bunch Parsley
  • Salt
  • Pepper
  • 1 l Sunflower oil
  • 120 g Panko
  • 60 g Frozen peas
  • 1 piece Clove of garlic
  • 3 Stiele Parsley
  • 50 ml Olive oil
  • 2 Stiele Mint
  • 1 tsp Chili flakes

Preparation (6 steps)

Prepare chickpeas

Rinse and drain the chickpeas for the falafel.

Chop onion and garlic

Peel 1 onion and 1 clove of garlic and put them in the mixing bowl. Chop 3 sec./speed 5.

Prepare falafel mixture

Put 1 slice of toast, 1/2 zucchini, 1 tsp ground cumin, 1/2 bunch of parsley, salt, pepper, 1 can of chickpeas (drained weight: 265 g) and the chopped onion and garlic in the mixing bowl. Mix 15 sec./speed 5.

Shape and bread the falafel

Form small balls or flat patties from the falafel mixture and roll in 120 g panko (or breadcrumbs as a substitute).

Fry falafel

Heat 1 l sunflower oil in a pan and fry the falafel in it until golden brown.

Prepare hummus

Put 60 g frozen peas, 1 clove of garlic, 3 sprigs of parsley, 50 ml olive oil, 2 sprigs of mint, 1 tsp chili flakes in the mixing bowl and puree for 30 sec./speed 8.
