Description

This creamy bread sauce is a classic accompaniment to roast chicken or turkey, especially during the festive season. It's surprisingly easy to make with the Thermomix®, and the result is a smooth, flavorful sauce that's far superior to anything you can buy in a jar. The combination of milk, cream, and breadcrumbs creates a wonderfully rich texture, while the onion, peppercorns, and bay leaves infuse the sauce with a subtle, aromatic flavor. I love to add a pinch of nutmeg at the end for a touch of warmth. It's a comforting and delicious addition to any holiday meal.

Ingredients (7 ingredients)

  • 1 piece onion
  • 300 ml milk
  • 75 ml double cream
  • 6 piece black peppercorns
  • 2 piece bay leaves
  • 100 g fresh white breadcrumbs
  • 1 tbsp butter

Preparation (4 steps)

Infuse the Milk

Thermomix® Setting
30 min/194°F/Speed 1 90

Place the onion, milk, cream, peppercorns, and bay leaves into the Thermomix mixing bowl. Cook for 30 Min./90°C/Stufe 1. Let the mixture infuse for 30 minutes after cooking.

Strain and Return to Mixtopf

Pour the milk mixture through a sieve into a jug. Clean the Thermomix mixing bowl and return the strained milk to the bowl.

Add Breadcrumbs and Cook

Thermomix® Setting
5 min/194°F/Speed 2 90

Add the fresh white breadcrumbs to the milk in the Thermomix mixing bowl. Cook for 5 Min./90°C/Stufe 2.

Finish the Sauce

Thermomix® Setting
1 min/140°F/Speed 2 60

Add the butter to the Thermomix mixing bowl. Season with salt, white pepper, and nutmeg to taste. Mix for 1 Min./60°C/Stufe 2.
