Description

This apricot cake with streusel is a delicious cake for the summer. The batter is topped with fresh apricots and covered with crispy streusel. Ideal for afternoon coffee or as a dessert. Preparation takes about 75 minutes.

Ingredients (16 ingredients)

  • 150 g Margarine or Butter, soft
  • 250 g Sugar
  • 1 Päckli Vanilla sugar
  • 2 piece Lemons, grated zest
  • 1 pinch Salt
  • 4 piece Eggs
  • 200 g Sour cream
  • 300 g Flour
  • 1 Päckli Baking powder
  • 100 g Ground almonds
  • 1 kg Apricots, pitted
  • 50 g Margarine or Butter
  • 50 g Sugar
  • 0.5 Päckli Vanilla sugar
  • 50 g Ground almonds
  • 50 g Flour

Preparation (9 steps)

Prepare batter

Thermomix® Setting

Put 150 g margarine or butter, soft, 250 g sugar and 1 packet vanilla sugar in the mixing bowl and stir for 2 min./speed 4.

Add lemon zest and salt

Add grated zest of 2 lemons and 1 pinch of salt and stir for 30 sec./speed 3.

Stir in eggs and sour cream

Add 4 eggs and 200 g sour cream and stir for 1 min./speed 3.

Mix flour, baking powder and almonds

Add 300 g flour, 1 packet baking powder and 100 g ground almonds and stir in for 1 min./speed 3.

Spread dough on tray

Spread the dough on a prepared baking tray (33 x 30 cm, greased and floured) and smooth it out. Pull the edge up a little. Cut approx. 1 kg apricots, pitted, into slices and place them close together on the dough, pressing down lightly.

Prepare streusel

Put 50 g margarine or butter, 50 g sugar, ½ packet vanilla sugar and 50 g ground almonds and 50 g flour in the mixing bowl and stir for 30 sec./speed 4 until streusel forms.

Spread streusel on cake

Crumble the streusel mixture and sprinkle over the apricots.

Baking

Bake the cake for approx. 45 minutes on the lowest rack of the oven preheated to 200 degrees.

Cool and dust

Remove the cake and let it cool. After cooling, dust with a little icing sugar.
