Description

This granola with buckwheat and amaranth is a crunchy and healthy breakfast or snack. It is vegan and gluten-free and can be easily prepared in the Thermomix®. The preparation time is about 40 minutes. Ideal for an energetic start to the day.

Ingredients (12 ingredients)

  • 50 g Rice cakes
  • 200 g Nuts mixed whole
  • 80 g Buckwheat flakes
  • 50 g Amaranth puffed
  • 50 g Pumpkin seeds
  • 50 g Sunflower seeds
  • 25 g Linseeds
  • 25 g Sesame
  • 150 g Maple syrup
  • 40 g Sunflower oil
  • 1 tsp Cinnamon
  • 1 pinch Salt

Preparation (5 steps)

Mix dry ingredients

Put 50 g rice cakes (roughly crushed), 200 g nuts (mixed whole, crushed), 80 g buckwheat flakes, 50 g amaranth puffed, 50 g pumpkin seeds, 50 g sunflower seeds, 25 g linseeds, 25 g sesame, 1 tsp cinnamon and 1 pinch of salt in a bowl and mix well.

Mix maple syrup and sunflower oil

Put 150 g maple syrup (or honey) and 40 g sunflower oil into the mixing bowl and heat for 2 min./50°C/speed 2 to dissolve the honey.

Mix dry ingredients with the liquid

Add the dry ingredients to the mixing bowl and mix for 10 sec./speed 3 until all ingredients are evenly coated.

Bake granola

Spread the mixture on a baking tray lined with baking paper and bake for approx. 30-40 minutes at 160°C, turning the mixture every 10 minutes to ensure even browning.

Cool and store

Allow the baked granola to cool completely and then store in an airtight glass container.
