Description

This hearty meat soup with potatoes is real soul food for cold days! I especially like to make it in winter when you need something hearty and warming. The secret lies in the long cooking time of the rib, which makes the broth particularly aromatic. The soup can be wonderfully prepared in advance and tastes even better the next day when it has been well infused. Served with fresh potato cubes, it is a complete and satisfying main course. An absolute must for all lovers of traditional cuisine!

Ingredients (7 ingredients)

  • 2.5 kg Thick rib(s)
  • 1.5 kg Onion(s)
  • 2 piece Bay leaves
  • 2 tbsp Peppercorns black
  • Salt
  • Potato(es)
  • Water

Preparation (5 steps)

Prepare meat

Cover the thick ribs in a large pot with water. Add bay leaves and peppercorns. Place the pot on the stove and cook for about 90 minutes until the bones come away from the meat. Remove the meat from the pot and let it cool.

Prepare onions and cook broth

Peel, halve and cut the onions into coarse strips, halve again. Put the onions in the mixing bowl and pour the broth (in which the ribs were) through a sieve into the mixing bowl.

Add meat and finish soup

In the meantime, remove the ribs from bones, cartilage and fat and pluck the tender meat into pieces. Then add the meat to the onion broth in the mixing bowl and cook for 15 min./100°C/speed 1. If necessary, add some water. Salt to taste.

Cool soup and remove fat

The soup is now ready. I put it in the fridge after it has cooled down so that I can easily lift off the layer of fat after it has cooled down. It is recommended to cook the soup one day before eating.

Cook and serve potatoes

Peel the potatoes and cut them into cubes. Cook the potato cubes in a pot with water on the stove until they are done. Distribute the potato cubes on soup plates and pour the hot soup over them. Now grind some more pepper from the mill over the soup.
