Description

This hearty peanut soup with a hint of Tex-Mex is a real taste experience! The combination of roasted peanuts, warming spices and creamy peanut butter makes it a special dish. The banana slices, briefly fried in butter, provide a surprising sweetness. I like to make this soup for parties or as a warming lunch on cool days. It is easy to prepare and can be prepared well in advance. If you like it spicier, you can add some more cayenne pepper. It goes well with tacos or just a piece of bread.

Ingredients (19 ingredients)

  • 1 etwas Oil
  • 1 clove Garlic
  • 1 tbsp Ginger, freshly grated
  • 1 bunch Spring onions, cut into small rings
  • 100 g Peanuts, roasted, without salt, coarsely chopped
  • 1 etwas Cinnamon powder
  • 1 etwas Clove powder
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Cumin powder
  • 0.5 tsp Mustard powder
  • 0.5 tsp Anise powder
  • 0.5 tsp Cayenne pepper
  • 100 g Peanut butter
  • 0.5 Liter Vegetable broth or chicken broth
  • 1 tsp Honey
  • 0.25 Liter Milk
  • 2 piece Bananas, sliced as a filling
  • 2 tbsp Lemon juice
  • 1 tbsp Butter for frying

Preparation (5 steps)

Sauté spring onions and garlic

Put 1 bunch of spring onions, cut into small rings, and 1 clove of garlic, pressed, into the mixing bowl. Add some oil and sauté for 3 min./120°C/speed 1.

Add broth, peanut butter and spices

Add 0.5 liters of vegetable broth or chicken broth, 100 g peanut butter, some cinnamon powder, some clove powder, 0.5 tsp turmeric powder, 0.5 tsp cumin powder, 0.5 tsp mustard powder, 0.5 tsp anise powder, 0.5 tsp cayenne pepper, 1 tbsp freshly grated ginger and 100 g coarsely chopped, roasted peanuts (without salt) to the mixing bowl and cook for 30 min./100°C/speed 1.

Season soup and add milk

Thermomix® Setting

Add 1 tsp honey and 0.25 liters milk to the mixing bowl and heat for 2 min./90°C/speed 1. Season with salt and pepper.

Fry banana slices

Cut 2 bananas into slices and drizzle with 2 tbsp lemon juice. Heat 1 tbsp butter in a pan and lightly fry the banana slices in it.

Arrange soup

Arrange the soup in plates and place the fried banana slices in it. Serve with tacos as desired.
