Description

This hearty vegetable soup is a real filler and warms wonderfully on cold days. I especially like to make it in the fall when the vegetables are fresh from the field. The combination of potatoes, leeks, white cabbage and beans makes the soup incredibly nutritious and delicious. A dash of goose fat provides a special flavor. If you like it vegetarian, you can simply omit the goose fat or replace it with vegetable oil. The long cooking time ensures that all the flavors combine perfectly. Simply delicious!

Ingredients (8 ingredients)

  • 6 piece Potatoes, peeled and quartered
  • 3 Stange/n Leek, cleaned and cut into 5 cm pieces
  • 1 piece Small white cabbage, cleaned, without stalk
  • 125 g Beans, white
  • 1 Stange/n Celery, sliced
  • 3 l Meat broth
  • 1 tbsp Goose fat
  • 1 bunch Parsley, smooth, roughly chopped

Preparation (5 steps)

Prepare beans

Soak the white beans in enough water overnight. The next day, pour off the soaking water and rinse the beans.

Prepare broth

Thermomix® Setting
10 min/212°F/Speed 1 100

Bring the meat broth to a boil in a saucepan. Alternatively, the broth can also be prepared in the Thermomix: add 3 liters of water and bouillon cubes to the mixing bowl and cook for 10 Min./100°C/Stufe 1.

Add vegetables and simmer

30 min/212°F/Speed 1 100

Add the peeled and quartered potatoes and the cleaned leek, cut into 5 cm pieces, to the boiling broth. Season with salt and pepper and simmer for 30 Min./100°C/Stufe 1.

Add more ingredients and cook until done

60 min/212°F/Linkslauf Speed 1 100 Reverse

Add the cleaned white cabbage, cut into 8 pieces, the drained white beans, the sliced celery, the roughly chopped parsley and the goose fat. Simmer everything for 60 Min./100°C/Linkslauf Stufe 1.

Season and serve

Season the soup with salt and pepper and serve hot.
