Description

This Malaga ice cream cake with rum cherries is an absolute highlight for every birthday or festive occasion! I have been making it for years and it is always a hit. The sponge cake base forms the perfect base for the creamy parfait mixture with juicy rum raisins and fruity cherries. The cake can be prepared well in advance and tastes simply delicious, especially on warm summer days. The combination of rum, cherries and cream is simply unbeatable. A real classic that is guaranteed to inspire!

Ingredients (16 ingredients)

  • 2 piece Eggs (Gr. M)
  • 50 g Sugar
  • 0.5 piece grated zest of untreated lemon
  • 100 g Flour
  • 1 tsp Baking powder
  • 0.5 piece Vanilla pod
  • 0.25 l Milk
  • 6 piece Egg yolks
  • 200 g Sugar
  • 100 g Raisins
  • 6 tbsp Rum
  • 1 Glas Sour cherries (680 ml)
  • 3 container Whipped cream (à 200 g)
  • 48 g Bark chocolate
  • 8 piece Mint leaves
  • 8 piece Wafer rolls

Preparation (16 steps)

Separate eggs and whisk egg whites

Thermomix® Setting
3 min/Speed 4

Separate eggs. Put egg whites into the mixing bowl and whisk until stiff for 3 min./speed 4. Transfer.

Mix egg whites with sugar and egg yolks

Thermomix® Setting
20 sec/Speed 3

Transfer the egg whites. Add sugar and egg yolks one after the other to the mixing bowl and stir in for 20 sec./speed 3. Add lemon zest and stir for a further 10 sec./speed 3.

Mix flour and baking powder and fold in

Mix flour and baking powder, sift onto the egg foam mixture and carefully fold in. Grease a springform pan (26 cm Ø). Pour in the batter and smooth it out.

Bake sponge cake

Bake in a preheated oven (electric oven: 175 °C/ gas: level 2) for approx. 15 minutes. Leave to cool.

Prepare vanilla milk

Cut the vanilla pod lengthwise and scrape out the pulp. Put milk, vanilla pulp and pod into the mixing bowl and bring to the boil for 5 min./90°C/speed 1.

Stir egg yolks and sugar until creamy

Thermomix® Setting
30 sec/Speed 4

Put egg yolks and 175 g sugar into the mixing bowl and stir until creamy for 30 sec./speed 4.

Stir vanilla milk into egg yolks and heat

Thermomix® Setting
8 min/176°F/Speed 2 80

Gradually add hot vanilla milk and stir for 1 min./speed 3. Then heat for 8 min./80°C/speed 2 until the cream thickens, but do not boil.

Stir the cream cold

Transfer the cream and stir cold. Leave to cool completely in the refrigerator.

Prepare raisins

Wash the raisins, drain and pour rum over them.

Chop cherries

Drain the cherries and chop them coarsely, except for a few for decoration.

Whip the cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Put 350 g cream into the mixing bowl and whisk with the butterfly for 2 min./speed 3.5 until stiff. Transfer.

Fold the cream into the cream

Carefully fold the whipped cream into the cold cream.

Fold in raisins and cherries

Also carefully fold the raisins and cherries into the cream.

Spread parfait mixture on sponge cake base and freeze

Place the springform ring around the sponge cake base and spread the parfait mixture on top. Freeze for at least 5-6 hours.

Remove the cake and decorate with cream

1 min/Speed 3.5

Wrap the springform ring with a warm tea towel and remove the cake from it. Put the remaining cream and sugar into the mixing bowl and whisk with the butterfly for 1 min./speed 3.5 until stiff.

Decorate the cake

Spread the cream all around the cake and fill the remaining cream into a piping bag with a plain nozzle. Decorate the cake with puffs. Put bark chocolate into the mixing bowl and chop for 5 sec./speed 5. Sprinkle the cake with chopped chocolate and garnish with the remaining cherries, wafer rolls and mint leaves.
