Description

This Mediterranean oven vegetables are an absolute delight! The combination of potatoes, eggplant, zucchini, fennel and sun-dried tomatoes, refined with garlic, chili and fresh herbs, simply tastes delicious. I like to make it as a side dish to grilled food or just as a light main course. The preparation in the Thermomix® is super easy and quick. If you like, you can add some diced feta cheese. A great dish for the warm season!

Ingredients (12 ingredients)

  • 150 g Potato(es) (La Ratte), halved lengthwise
  • 1 piece Eggplant(s) quartered lengthwise, sliced
  • 1 piece Zucchini halved lengthwise, sliced
  • 1 Knolle/n Fennel quartered, cut into thin slices
  • 100 g Tomato(es) dried in oil, drained
  • 1 Zehe/n Garlic clove(s) finely sliced
  • 1 piece Chili pepper(s) green, finely chopped
  • 8 tbsp Olive oil
  • Salt Olive salt
  • Pepper black from the mill
  • Herbs Mediterranean, roughly chopped
  • Feta cheese diced

Preparation (5 steps)

Prepare potatoes

Put 150 g potatoes (La Ratte), halved lengthwise, in an unperforated steaming attachment. Season with some olive salt and black pepper from the mill. Drizzle with 2 tablespoons of olive oil and turn several times so that the cut side is facing down.

Prepare vegetables

Mix 1 eggplant quartered lengthwise and sliced, 1 zucchini halved lengthwise and sliced, 1 bulb of fennel quartered and cut into thin slices, 100 g sun-dried tomatoes in oil (drained), 1 finely sliced garlic clove and 1 finely chopped green chili pepper in a bowl. Season with some olive salt, black pepper from the mill and roughly chopped Mediterranean herbs. Add 6 tablespoons of olive oil and mix everything well so that the vegetables are coated with oil.

Steam potatoes

Pour 500 ml of water into the mixing bowl, place the steaming attachment with the potatoes in the Varoma container and steam for 25 min./Varoma/speed 1.

Steam vegetables

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Open the Varoma container and add the remaining vegetables. Steam for another 20 min./Varoma/speed 1. 10 minutes before the end of the cooking time, open the Varoma and mix the vegetables once with the spatula.

Arrange

Arrange the vegetables and decorate with some fennel greens. If you like, you can add diced feta cheese on top.
