Description

This Mediterranean vegetable salad is an absolute delight and perfect for warm summer days! I often make it for barbecue parties or as a light appetizer. The combination of peppers, zucchini, onions and garlic, refined with fresh herbs, is simply unbeatable. It is especially delicious when it can sit in the refrigerator for a few hours. This is how the flavors combine perfectly. A dash of olive oil rounds off the whole thing. The salad is vegetarian and can be prepared well in advance. Try it out, you will be thrilled!

Ingredients (7 ingredients)

  • 2 piece Bell pepper(s) red
  • 400 g Zucchini
  • 1 piece Onion(s)
  • 2 Zehe(n) Clove(s) of garlic
  • 100 g Olives
  • 40 g Olive oil
  • to taste Herbs thyme, marjoram, basil, oregano salt and pepper

Preparation (6 steps)

Chop onion and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for another 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté vegetables

Thermomix® Setting

Add 40 g olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare peppers and zucchini

Cut 2 red bell peppers and approx. 400g zucchini into bite-sized pieces.

Add and cook vegetables

Thermomix® Setting
10 min/212°F/Speed 1 100

Add peppers, zucchini and 100g olives to the mixing bowl and cook for 10 min./100°C/speed 1.

Season and let cool

Remove the vegetables from the mixing bowl and season with salt, pepper, thyme, marjoram, basil and oregano. Add some olive oil and let it cool.

Add tomatoes and let sit

Quarter the tomatoes and stir them into the cooled vegetables. Let the salad sit in the refrigerator for about 2 hours.
