Description

These stuffed baked apples are a wonderful dessert, especially in the cold season. The combination of warm, soft apples, creamy vanilla custard filling and fruity red currant jelly is simply irresistible. I like to make them for Christmas or birthdays, but also just because I feel like something sweet. The preparation is a bit more complex, but it's worth it! The apples are filled with homemade vanilla custard and baked in the oven until they are nice and soft. Served with red currant jelly and brittle, they are a real treat.

Ingredients (7 ingredients)

  • 1 Pck. Custard powder vanilla flavor (for cooking)
  • 2 tbsp Sugar
  • 400 ml Milk
  • 1 piece Egg yolk (size M)
  • 50 g Hazelnut brittle
  • 4 piece Apples (approx. 175 g each; e.g. Cox Orange)
  • 75 g Red currant jelly

Preparation (6 steps)

Prepare custard powder

Put 1 pack of custard powder vanilla flavor (for cooking), 2 tbsp of sugar and 50 ml of milk into the mixing bowl and stir for 20 sec./speed 3.

Cook custard

Thermomix® Setting
2 min/212°F/Speed 2 100

Add 350 ml of milk to the mixing bowl and bring to the boil for 5 min./100°C/speed 2. Then add the mixed custard powder and stir for another 2 min./100°C/speed 2.

Refine custard

15 sec/Speed 3

Pour the custard into a bowl and let it cool to lukewarm, stirring occasionally. Add 1 egg yolk (size M) and stir in for 15 sec./speed 3. Then fold in 30 g of hazelnut brittle.

Prepare apples

Wash and dry 4 apples (approx. 175 g each; e.g. Cox Orange). Cut a lid off the apples. Hollow out the apples with a melon baller, leaving an edge of approx. 5 mm thick.

Fill and bake apples

Fill the apples with the brittle custard, place in an ovenproof dish and bake in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30–40 minutes. Place apple lids in the mold after half the baking time.

Arrange and serve

Arrange baked apples on plates. Sprinkle with remaining brittle and serve warm with 75 g red currant jelly.
