Description

These orange curd muffins are a delicious treat for breakfast or dessert. With fresh orange juice and curd, they are juicy and aromatic. The preparation is quick and easy, ideal for baking beginners. The recipe yields 12 servings and is perfect for brunch or as a sweet treat in between.

Ingredients (9 ingredients)

  • 200 g Wheat flour Type 405
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 2 piece Eggs Size M
  • 120 g Sugar
  • 1 Pck. Vanilla sugar
  • 80 ml Vegetable oil
  • 200 g Curd 20% fat
  • 1 piece Organic orange juice and zest

Preparation (9 steps)

Preheat oven

Preheat the oven to 180°C top/bottom heat. Line a 12-cup muffin tin with paper liners.

Mix dry ingredients

Put 200 g wheat flour Type 405, 2 tsp baking powder and 1 pinch of salt in the mixing bowl and mix for 10 sec./level 4.

Beat eggs, sugar and vanilla sugar

In a separate bowl, beat 2 eggs size M, 120 g sugar and 1 pack of vanilla sugar until creamy.

Stir in oil

Add 80 ml vegetable oil to the egg mixture and stir in for 10 sec./level 3.

Add curd, orange juice and zest

Add 200 g curd 20% fat, 1 organic orange juice and zest and stir for 15 sec./level 3 until everything is smooth.

Mix in dry ingredients

Thermomix® Setting

Add the dry ingredients from the mixing bowl to the egg-oil mixture and stir in for 20 sec./level 3.

Distribute dough

Distribute the dough evenly into the molds with a tablespoon.

Bake muffins

Bake the orange curd muffins on the middle rack for about 25 minutes until golden brown.

Let muffins cool

After baking, let the muffins cool completely before serving.
