Description

This dish is perfect for anyone who is on a low carb diet or simply looking for a light and delicious meal. The zucchini noodles are quick to prepare and the creamy feta sauce gives the dish a special touch. I like to make the zucchini noodles in the summer when zucchini is in season. The walnuts provide a nice crunch and the feta a pleasant saltiness. An absolute favorite recipe that always goes down well with me! Also ideal for a quick lunch or dinner.

Ingredients (9 ingredients)

  • 2 piece Zucchini
  • 4 tbsp Walnuts
  • 2 piece Spring onions
  • 100 g Feta
  • 100 ml Cream
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg

Preparation (9 steps)

Chop walnuts

Thermomix® Setting
5 sec/Speed 5

Add 4 tbsp walnuts to the mixing bowl and chop for 5 sec./speed 5. Then transfer.

Roast walnuts

Roast the chopped walnuts in a pan without fat and set aside.

Prepare spring onions

Clean 2 spring onions and cut into fine rings.

Cut zucchini into spaghetti

Cut 2 zucchini into spaghetti shape with a spiral cutter.

Fry zucchini spaghetti

Heat 1 tbsp olive oil in a pan and fry the zucchini spaghetti in it for about 1 minute. Then remove and set aside.

Sauté spring onions

Add the spring onion rings to the pan and sauté briefly.

Prepare sauce

Thermomix® Setting
3 min/194°F/Speed 2 90

Add 100 ml cream, 60 g feta (2/3 of the amount), salt and pepper to taste to the mixing bowl and heat for 3 min./90°C/speed 2. Season with nutmeg.

Mix in zucchini spaghetti

Add the fried zucchini spaghetti to the pan with the sauce and mix well.

Serve

Arrange the zucchini spaghetti with the sauce on plates and sprinkle with the remaining feta (40 g) and the roasted walnuts. Serve immediately.
