Description

This recipe for Injera with Wot is a true taste experience! The slightly sour flatbread, called Injera, is traditionally made from Teff flour and serves as the base for the spicy lentil stew, Wot. Preparing the dough takes some time as it needs to rest for several hours, but the result is worth it. The stew is rich in flavors and is refined with Berbere spice. A great dish for anyone who loves or wants to get to know Ethiopian cuisine. Perfect for a cozy dinner with friends!

Ingredients (14 ingredients)

  • 1 cube Yeast
  • 700 ml lukewarm Water
  • 500 g Teff flour
  • 2 piece Onions
  • 3 clove Garlic
  • 2 cm Ginger
  • 2 piece Carrots
  • 150 g Tomatoes
  • 2 tbsp Oil
  • 2 tbsp Tomato paste
  • 1.5 tbsp Berbere spice
  • 750 ml Vegetable broth
  • 250 g red Lentils
  • 0.5 tsp Salt

Preparation (7 steps)

Prepare yeast water

Add 700 ml lukewarm water and 1 cube of yeast to the mixing bowl and dissolve for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Add 500 g Teff flour and stir for 20 sec./speed 4. Transfer the dough to a bowl and let it rest, covered, for at least 6-8 hours.

Chop onions, garlic and ginger

Thermomix® Setting

Put 2 onions, 3 cloves of garlic and 2 cm of ginger in the mixing bowl and chop for 5 sec./speed 5. Use the spatula to push down.

Sauté vegetables

Add 2 tbsp oil and sauté for 3 min./120°C/speed 1.

Chop carrots and tomatoes

Thermomix® Setting
5 sec/Speed 4

Add 2 carrots and 150 g tomatoes to the mixing bowl and chop for 5 sec./speed 4. Use the spatula to push down.

Prepare stew

Thermomix® Setting
35 min/212°F/Speed 1 100 Reverse

Add 2 tbsp tomato paste, 1.5 tbsp Berbere spice, 750 ml vegetable stock, 250 g red lentils and 0.5 tsp salt and simmer for 35 min./100°C/speed 1 reverse rotation.

Bake Injera

Heat a coated pan without fat, sprinkle a pinch of salt into it and add a ladle of dough. Swivel pan back and forth until the dough has spread and forms bubbles. Put on the lid and bake the dough until golden brown. Perform this step outside of the Thermomix.
