Description
This orange cake is a moist cake with a refreshing citrus aroma. The combination of orange and lemon gives the cake a special touch. It is ideal for afternoon coffee or as a dessert. The preparation is simple and the cake is ready in about an hour.
Ingredients (10 ingredients)

100 g Vegetable margarine

2 piece Egg yolk

220 g Sugar

1 piece Orange, juice and zest

1 piece Lemon, juice and zest

100 g Almonds, ground

220 g Flour, sifted
-
0.5 Päckli Baking powder

2 piece Egg white, stiff
-
1 pinch Salt
Preparation (5 steps)
Mix margarine and egg yolks until fluffy
Add 100 g margarine and 2 egg yolks to the mixing bowl and mix for 3 min./speed 4 until fluffy.
Add sugar, orange and lemon
Add 220 g sugar, juice and zest of 1 orange and juice and zest of 1 lemon and mix for 1 min./speed 3.
Add almonds and flour
Add 100 g ground almonds, 220 g sifted flour and 1/2 packet of baking powder and mix for 30 sec./speed 3.
Fold in egg whites
Alternately fold in 2 stiffly beaten egg whites and 1 pinch of salt.
Baking
Fill the dough into a cake tin (length 24-26 cm) lined with parchment paper or well greased and bake on the second lowest rack at 180°C for approx. 40-45 minutes. After baking, brush with warmed orange jam passed through a sieve.
