Description

These pistachio salmon cutlets are an explosion of flavor! The crispy breading, enriched by the scent of lemon and the crunchiness of pistachios, envelops the salmon making it irresistible. Perfect for a quick but tasty lunch, or for a light and delicious dinner. I often prepare them when I have guests for dinner and I want to make a good impression without spending hours in the kitchen. They are prepared in a flash and everyone always likes them! A healthy and delicious alternative to the usual cutlets, rich in omega-3 and easy to digest. Ideal for those looking for a light but flavorful dish.

Ingredients (9 ingredients)

  • 4 piece salmon fillets
  • 100 g breadcrumbs
  • 1 clove garlic
  • 1 piece lemon _grated zest_
  • parsley
  • chopped pistachio
  • olive oil
  • fine salt
  • pepper

Preparation of flavored breadcrumbs

Put the breadcrumbs, parsley, peeled garlic, lemon zest, salt and pepper in the bowl. Blend to obtain a uniform flavored breadcrumbs. Add 100 g of breadcrumbs, a clove of garlic, the grated zest of a lemon, parsley to taste, fine salt to taste and pepper to taste in the bowl and blend for 20 Sec./Stufe 8.

Transfer and mixing of the breading

Move the breading to a plate and mix it with the chopped pistachio to taste. Mix well to blend the ingredients.

Breading the salmon

Season the salmon fillets with a little salt, then dip them in the pistachio breading on both sides, pressing to make it stick. Make sure the breading adheres well to the fillets.

Cooking in the air fryer

Place the breaded salmon fillets in the air fryer basket with parchment paper on the bottom, without overlapping them. Sprinkle the surface with a little olive oil. Cook in the air fryer at 180°C for 15 minutes.

Service

Move the salmon cutlets to a serving dish and serve hot and crispy!
