Description

This autumnal gnocchi vegetable pan is a quick and easy dish that is perfect for a cozy evening. The Hokkaido pumpkin and apple give the pan a sweet note that harmonizes wonderfully with the hearty pork loin. I especially like to make this pan in autumn when the pumpkin is in season. The preparation is super straightforward and doesn't take long, so it's ideal for after work. If you like, you can add some fresh sage. Simply tastes delicious!

Ingredients (6 ingredients)

  • 600 g Hokkaido pumpkin
  • 1 piece Apple
  • 200 g Pork loin
  • 4 tbsp Sunflower oil
  • 500 g Gnocchi
  • 0.5 bunch Parsley (smooth)

Preparation (5 steps)

Prepare pumpkin and apple

Wash, core and dice the pumpkin. Wash, core and cut the apple into wedges and cut the wedges into slices. Dice the pork loin as well.

Sauté pumpkin

Thermomix® Setting
10 min/248°F/Speed 1 120

Put the diced pumpkin into the mixing bowl, add 2 tbsp sunflower oil and sauté for 10 min./120°C/speed 1.

Add gnocchi, apple and pork loin

Thermomix® Setting
10 min/248°F/Speed 1 120 Reverse

Add the gnocchi, the sliced apple and the diced pork loin together with the remaining 2 tbsp sunflower oil to the mixing bowl and stir in for another 10 min./120°C/speed 1.

Chop parsley

Thermomix® Setting
3 sec/Speed 5

Wash the parsley, pluck the leaves, put them in the mixing bowl and chop for 3 sec./speed 5.

Season and Serve

Add the chopped parsley to the gnocchi-vegetable-pan in the mixing bowl, season with salt and pepper and serve immediately.
