Description

This farm chicken stuffed with bread and garlic is a comforting and flavorful dish, perfect for a family meal or a special occasion. The bread stuffing, flavored with garlic and sage, provides a soft texture and delicate aromas that blend perfectly with the poultry. I have been preparing this dish for years, and it is always a sensation with my guests. Baking allows for a crispy skin and tender, juicy flesh. Ingredients (8 ingredients)

  • 1 piece farm chicken
  • 15 cl dry white wine
  • 10 cl water
  • Stale bread
  • 5 clove garlic
  • 2 feuille fresh sage
  • Salt or fine salt
  • Pepper

Preparation of garlic and bread

Peel and remove the germ from 4 cloves of garlic. Put the garlic cloves in the bowl and chop them 3 Sek./Stufe 7. Set aside the chopped garlic.

Preparation of the chicken

Rub the stale bread with a clove of garlic. Prick the chicken with half of the reserved chopped garlic, as for a roast. Slip the remaining garlic and sage leaves into the slit. Place the chicken in an oven dish, salt, pepper.

Stuffing the chicken

Cut the stale bread into pieces that are neither too small nor too large. Stuff the chicken with it, and reserve for a minimum of 1 hour so that the chicken soaks up the aromas.

Cooking the chicken in the oven

Preheat the oven to thermostat 7 (210°C). Bake the chicken, and when it is nicely browned and the juices have stuck to the dish, add the white wine and water, scrape the dish and baste the chicken with this juice for the rest of the cooking time. If necessary, you can add water. It takes 1 hour 15 to 1 hour 45 of cooking, depending on the size of the chicken.
