Description

This recipe for potatoes in paprika tomato sauce is a vegetarian main course that is easy to prepare and ideal for autumn. The potatoes are steamed in the Varoma, while the sauce is prepared in the mixing bowl. The dish is cheap, hearty and good for a quick lunch or dinner.

Ingredients (10 ingredients)

  • 1 piece large Onion
  • 1 piece red Chili Pepper
  • 1 tbsp Rapeseed oil
  • 250 g red Bell Peppers
  • 400 g ripe Tomatoes
  • 600 g Potatoes
  • 250 ml Vegetable broth
  • grated organic Lemon zest
  • Salt
  • Pepper

Preparation (7 steps)

Chop Onion and Chili Pepper

Peel and quarter 1 large onion. Wash, clean, slit lengthwise 1 red chili pepper and remove the membranes and seeds. Put both in the mixing bowl, attach the measuring cup and chop for 5 sec./level 5.

Sauté Onion and Chili Pepper

Push down with the spatula, add 1 tbsp rapeseed oil and sauté for 3 min./120°C/level 1.5.

Prepare Vegetables

Wash, clean and roughly cut 250 g red bell peppers. Wash, halve 400 g ripe tomatoes and remove the stalks. Peel, wash 600 g potatoes and cut into bite-sized pieces.

Chop Vegetables

Put 100 g potatoes, peppers and tomatoes in the mixing bowl, attach the measuring cup and chop for 2 sec./level 5.

Cook Potatoes

20 min/Varoma/Speed 2 Varoma

Push down with the spatula and add 250 ml vegetable broth. Put the remaining potatoes in the Varoma, place it on top and cook everything for 20 min./Varoma/level 2.

Puree Sauce

30 sec/Speed 6-8

Remove the Varoma and set aside. Finely puree the paprika tomato sauce for 30 sec./level 6-8 increasing.

Season Sauce and Add Potatoes

5 min/194°F/Speed 1,5 194°F Reverse

Season with grated organic lemon zest, salt and pepper. Add the steamed potatoes and let everything infuse for 5 min./90°C/level 1.5 reverse.
