Description

This creamy curry chicken is a comforting and flavorful dish, perfect for a family dinner or an evening with friends. The tender chicken meat, immersed in a rich and fragrant sauce of coconut milk and curry, goes perfectly with basmati rice. I prepare it often, because it is quick to make and everyone always likes it. A tip? Add a pinch of chili pepper for an extra touch! Ideal for those who love exotic flavors but don't want to give up simplicity. It is prepared in less than an hour and the result is guaranteed: a creamy and delicious dish that will win you over at the first taste.

Ingredients (7 ingredients)

  • 600 g Chicken breast
  • 1 piece Onion
  • 400 ml Coconut milk
  • 2 tbsp Curry
  • 30 ml Extra virgin olive oil
  • 1 pinch Salt
  • 1 bunch Parsley

Preparation of the chicken

Cut the chicken breast into regular pieces, removing any small bones and calluses. Salt the meat and massage it with your fingers. Set aside.

Chop the onion

Put the onion in the bowl and chop for 3 Sec./Stufe 5.

Sauté the onion

Add the extra virgin olive oil to the bowl and sauté for 3 Min./120°C/Stufe 1.

Add the curry

Thermomix® Setting

Add the curry to the bowl and flavor for 2 Min./120°C/Stufe 1.

Brown the chicken

In a pan, brown the chicken externally over high heat. This step is not performed in the Thermomix to ensure optimal browning of the meat.

Cooking the chicken in the Thermomix

Thermomix® Setting
30 min/203°F/Speed 1/Linkslauf 95 Reverse

Transfer the browned chicken to the Thermomix bowl. Add the coconut milk, cover and cook for 30 Min./95°C/Stufe 1/Linkslauf. If the sauce dries out, add half a glass of water.

Add the parsley

Thermomix® Setting
10 Sec./Speed 1/Linkslauf Reverse

Add a handful of chopped parsley to the bowl and mix for 10 Sec./Stufe 1/Linkslauf.

Cook the rice

Cook the rice in abundant salted water and drain it al dente. Season with a drizzle of oil. This step is not performed in the Thermomix to ensure optimal rice cooking.

Serve

Serve the curry chicken and rice on the same plate. Enjoy your meal!
