Description

This poultry dish in the style of Burgundy is a classic revisited with the Thermomix®. I love preparing this recipe, especially in autumn or winter, because it warms the heart and soul. The chicken thighs, tender and flavorful, simmer in a rich red wine sauce, garnished with smoked bacon. The crispy garlic bread adds a gourmet touch and perfectly complements this dish. It is an ideal dish for a festive meal or a convivial dinner with friends. Accompany it with spätzles for an even more complete and tasty meal. A real treat!

  • 4 piece Chicken thighs
  • 250 g Smoked bacon
  • Butter
  • 10 cl Water
  • 1 piece Baguette
  • 75 cl Red wine 12°
  • Flour
  • Clove(s) of garlic
  • Salt
  • Pepper

Preparation of bacon

Thermomix® Setting

Put the smoked bacon (250 g) in the bowl and sauté with a knob of butter for 5 Min./120°C/Stufe 1. Set aside the grilled bacon.

Sear the chicken thighs

Sauté the chicken thighs (4 pieces) in a pan with a knob of butter. Grill them well on each side. Set aside.

Deglaze and mix

Deglaze the pan with 10 cl of water and pour the juice into the Thermomix bowl. Add the reserved bacon and chicken thighs.

Preparation of the sauce

Add flour (quantity as needed) and red wine (75 cl) to the bowl. Mix 5 Min./90°C/Stufe 3 until a homogeneous sauce is obtained, but not too thick.

Seasoning and simmering

50 min/194°F/Gentle stir speed 90 Reverse

Salt and pepper. Program 50 Min./90°C/Sanftrührstufe/Linkslauf to simmer everything.

Preparation of garlic croutons

Meanwhile, cut the baguette (1 piece) into slices and rub each slice with a clove of garlic.

Cooking the croutons

Place the baguette slices on the baking sheet and bake at 180°C until they are crispy or well grilled, according to your taste.
