Description

This rustic spinach and cheese tart is a delight that I often prepare to share with family or friends. The combination of the homemade dough, the creamy spinach filling and the touch of nutmeg make it irresistible. It is perfect as a starter or light main course. The dough, although it requires a little rest, is very easy to make with the Thermomix®. Go ahead and try it! You can use different types of cheese to vary the flavor. I sometimes add a little goat cheese to give it a more intense touch. The tart is ideal for a weekend brunch or an informal dinner.

Ingredients (11 ingredients)

  • 300 gramos flour
  • 100 centímetros cúbicos olive oil
  • 125 centímetros cúbicos water
  • 1 pinch salt
  • 1 piece onion
  • 100 gramos cream cheese
  • 150 gramos creamy cheese or mozzarella
  • 2 piece eggs
  • 1 pinch pepper
  • 1 pinch nutmeg
  • 100 gramos spinach

Preparation (12 steps)

Base dough

Thermomix® Setting
20 sec/Speed 4

Place the flour, olive oil and salt in the Thermomix glass. Mix for 20 seconds at speed 4.

Add water and knead

Thermomix® Setting
2 min/Kneading speed

Add the water to the Thermomix glass and knead for 2 minutes in kneading function.

Resting the dough

Remove the dough from the glass, form a ball and wrap it in transparent film. Let it rest in the refrigerator for at least 30 minutes.

Prepare the onion

Thermomix® Setting
3 sec/Speed 5

Cut the onion into julienne strips. Place the onion in the Thermomix glass and program 3 seconds at speed 5 to chop it.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add a little olive oil to the onion in the Thermomix glass and program 3 minutes, temperature 120°C, speed 1.

Add the spinach

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the washed spinach to the Thermomix glass together with the onion. Program 5 minutes, temperature 100°C, speed 1.

Incorporate the cream cheese

Thermomix® Setting
20 sec/Speed 3

Add the cream cheese to the Thermomix glass and mix for 20 seconds at speed 3.

Cool the filling

Remove the filling from the glass and let it cool completely.

Stretch the dough

Preheat the oven to 180°C. Stretch the dough with a rolling pin until it is 3 mm thick.

Bake the dough

Place the dough in a greased mold, remove the excess and prick the base with a fork. Bake for 5-8 minutes at 180°C.

Add eggs and spices

Add the eggs, pepper and nutmeg to the cooled filling and mix well.

Fill and bake

Remove the dough from the oven, pour in the filling and add the creamy cheese or mozzarella in cubes. Bake for 15-20 minutes at 180°C.
