Description

This red cabbage salad with spring onions is a true classic that I always enjoy preparing. The red cabbage becomes wonderfully tender by kneading it with salt and develops its full aroma. The spring onions add a fresh note, while apple vinegar and oil give the salad a pleasant acidity and smoothness. It is quick to prepare and tastes especially good when it has been left to steep a little. Ideal as a side dish to hearty meals or simply as a light salad.

Ingredients (6 ingredients)

  • 800 g Red cabbage, cleaned
  • 4 piece Spring onions
  • 4 tbsp Apple vinegar
  • 2 tbsp Vegetable oil, e.g. rapeseed or sunflower oil
  • 2 tsp Salt, level
  • 1 tbsp Sugar

Preparation (4 steps)

Prepare red cabbage

Thermomix® Setting
3 min/keine/Speed 3 Reverse

Clean the red cabbage, cut out the stalk and quarter or eighth the rest. Place the red cabbage in the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula. Add salt and mix for 3 min./speed 3 reverse.

Prepare spring onions

Thermomix® Setting
3 sec/keine/Speed 5

Clean the spring onions, halve them lengthwise and place them in the mixing bowl. Chop for 3 sec./speed 5. Transfer.

Mix salad

Thermomix® Setting
20 sec/keine/Speed 3 Reverse

Add sugar, chopped spring onions, apple vinegar and vegetable oil to the red cabbage in the mixing bowl. Mix for 20 sec./speed 3 reverse.

Let the salad steep

Transfer the red cabbage salad to a bowl and season with a little pepper. Leave to steep for at least 30 minutes.
