Description

This green leafy salad with warm broccoli florets and sprouts is a light and healthy dish, ideal as a starter or main course. The salad is quick to prepare and offers a fresh combination of crunchy vegetables and a simple dressing. Perfect for a light meal or as a side dish to a protein-rich dish. The preparation time is about 25 minutes.

Ingredients (10 ingredients)

  • 80 g Seasonal leafy salad
  • 150 g Broccoli (fresh or frozen)
  • 0.5 tsp Natural salt for the cooking water
  • 1 pinch Herb salt
  • Freshly ground pepper
  • 1 piece Small clove of garlic
  • 1 tbsp Olive oil
  • 0.5 Juice of half a lemon
  • 3 tbsp Apple juice
  • 30 g Sprouts, e.g. from mung beans, cress

Preparation (5 steps)

Prepare broccoli

Pluck 150 g broccoli into small florets.

Steam broccoli

Thermomix® Setting

Place the broccoli florets in the steamer basket. Add 1/2 tsp natural salt and 500 ml water to the mixing bowl, insert the steamer basket and steam for 10 min./Varoma/speed 1.

Prepare leafy salad

Wash 80-100 g leafy salad and tear into bite-sized pieces. If using endive or sugar loaf, cut into narrow strips.

Prepare dressing

Put 1 small clove of garlic into the mixing bowl and chop for 3 sec./speed 7. Add 1 tbsp olive oil, 1 pinch of herb salt, freshly ground pepper, juice of half a lemon and 3 tbsp apple juice and stir for 10 sec./speed 3.

Arrange salad

Mix the leafy salad with the dressing and spread the still warm broccoli florets and 30 g washed sprouts on top.
