Sandwich bread recipe with Lievito Madre.

Ingredients (8 ingredients)

  • 30 g room temperature LM
  • 70 g Water
  • 140 g Flour
  • 240 g active Lievito Madre
  • 500 g Wheat flour 550
  • 320 g Water
  • 100 g Olive oil
  • 25 g Salt

Activate Lievito Madre (in the morning)

Put 30 g of room temperature Lievito Madre and 70 g of water into the mixing bowl and mix for 2 min./speed 2. Add 140 g of wheat flour 550 and knead for 3 min./kneading stage. Put the dough in a tall glass and let it rise covered in a warm place during the day until it has doubled in size. Yields 240 gr of active Lievito Madre

Prepare main dough (in the evening)

Thermomix® Setting

Put 240 g of active Lievito Madre and 320 g of water into the mixing bowl and mix for 1 min./speed 3. Add 500 g of wheat flour 550 and 25 g of salt and knead for 3 min./kneading stage. Add 100 g of olive oil gradually until it has completely combined with the dough.

Dough rest

Put the dough in a clean bowl brushed with oil and cover with a damp cloth. Stretch and fold 2-3 times within 2 hours. Store in the refrigerator overnight.

Shape and let rest

The next day, grease a long cake tin with butter and dust with flour. Place the dough in it and let it rest for another 1 hour.

Baking

Preheat the oven to 230 degrees. Finally, brush the bread with a little olive oil and bake for approx. 35 minutes.
