Description

This Asian coconut soup with fresh summer rolls is an absolute highlight! The creamy soup with chicken, vegetables and egg noodles harmonizes perfectly with the crispy summer rolls, filled with shrimp, vegetables and avocado. There are also two delicious dips: a peanut dip and a soy-lime dip. I like to make this soup when I want to cook something special. The preparation is a little more complex, but the result is worth it. The soup tastes especially good when garnished with fresh coriander leaves and chili rings. A feast for the senses!

Ingredients (30 ingredients)

  • 2 tbsp Peanut butter
  • 5 tbsp Water
  • 1 tsp Agave nectar
  • 2 tsp Soy sauce
  • 2 tsp Lime juice
  • 2 piece Lime(s), juice of it
  • 1 tsp Rice vinegar
  • 1 cm Ginger
  • 1 tsp Sesame
  • 1 tsp Soy sauce
  • 1 tsp Sesame oil, roasted
  • 1 tsp Agave nectar
  • 0.5 tsp Chili flakes
  • 1 piece Bell pepper(s), yellow
  • 0.5 piece Cucumber(s)
  • 1 piece Avocado(s)
  • 0.5 piece Pointed cabbage
  • 12 Blätter Rice paper
  • to taste Salt
  • to taste Sushi vinegar
  • 2 Pck. Shrimp(s) (Party shrimp) à 100 g
  • 1 piece Chili pepper(s), cut into rings
  • Coriander leaves
  • 1 l Vegetable broth
  • 600 ml Coconut milk
  • 1 piece Chicken breast, diced
  • 1 Glas Bamboo sprout(s)
  • 100 g Egg noodles
  • 1 piece Zucchini, diced
  • 5 piece Mushrooms, sliced

Preparation (9 steps)

Prepare peanut dip

Mix 2 tbsp peanut butter, 5 tbsp water, 1 tsp agave nectar, 2 tsp soy sauce and 2 tsp lime juice in a bowl. Set aside.

Prepare soy-lime dip

Combine the juice of 2 limes, 1 tsp rice vinegar, 1 tsp soy sauce, 1 tsp roasted sesame oil and 1 tsp agave nectar in a bowl. Peel 1 cm of ginger and grate directly into the dip. Season with 0.5 tsp chili flakes and sprinkle with 1 tsp sesame to taste. Set aside.

Prepare vegetables for the summer rolls

Core 1 yellow bell pepper and 0.5 cucumber and cut into strips, the length of which should be approximately half the rice paper. Halve 2 packs of party shrimp lengthwise. Finely chop 0.5 pointed cabbage, salt and season with sushi vinegar to taste.

Fill and roll summer rolls

Briefly soak 12 sheets of rice paper in warm water until transparent, then place on the work surface. Place pointed cabbage, cucumber, bell pepper and shrimp in the middle of the rice paper. Fold the bottom side of the rice paper over the vegetables and fold in the corners, then roll up the entire rice paper. Repeat this process five times. Then repeat the same process, replacing the cucumber with 0.5 avocado.

Sauté Tom Yum paste

Sauté bamboo sprouts

Add 1 jar of bamboo sprouts and sauté for another 2 min./120°C/speed 1.

Cook soup

Pour in 1 liter of vegetable broth and 600 ml of coconut milk and bring to a boil for 10 min./100°C/speed 1.

Add remaining ingredients

Add 1 diced chicken breast, 100 g egg noodles, 1 diced zucchini and 5 sliced mushrooms to the mixing bowl and simmer for 8 min./100°C/reverse rotation speed 1 until the chicken and noodles are cooked.

Arrange and serve

Serve the summer rolls with the dips and garnish with 1 chili pepper cut into rings and coriander leaves. Arrange the soup in bowls.
