Description

This cucumber tomato salad is a real classic and a welcome refreshment, especially in summer. The crunchy cucumber and juicy tomatoes harmonize perfectly with the fresh watercress. A hard-boiled egg provides a creamy note and provides valuable protein. The dressing made from oil, vinegar and a pinch of sugar rounds off the taste. The salad is quick to prepare and is ideal as a side dish for grilling or as a light meal in between. If you like, you can add some feta or mozzarella.

Ingredients (7 ingredients)

  • 500 g Cucumber(s)
  • 400 g Tomato(es)
  • 1 bunch Watercress
  • 1 piece Egg(s), hard-boiled
  • 4 tbsp Oil
  • 2 tbsp Vinegar
  • 1 Prise(n) Sugar

Preparation (4 steps)

Prepare cucumber and tomatoes

Wash the cucumber thoroughly, cut off the ends, halve lengthwise and cut or plane into thin slices. Wash the tomatoes, dry them, halve them, remove the stalk attachments and, if desired, core them. Cut the tomatoes into slices or strips. Remove yellow leaves and thicker stems from the watercress, rinse carefully and let it drain. Arrange the prepared ingredients in portion bowls.

Prepare dressing

Put 4 tbsp oil, 2 tbsp vinegar, 1 pinch sugar, salt and pepper into the mixing bowl and mix for 10 sec/speed 3.

Pour dressing over the salad

Pour the prepared dressing over the salad ingredients in the bowls.

Prepare and garnish egg

Peel the hard-boiled egg, put it in the mixing bowl and chop for 3 sec/speed 5. Sprinkle the chopped egg over the salad.
