Description

This hearty meat stew is a true classic of Swabian cuisine! With tender beef, homemade spätzle and fresh potatoes, it is the perfect dish for cold days. I especially like to cook it in autumn and winter, when you need something warming and hearty. The preparation takes a little time, but the effort is definitely worth it. The stew tastes especially delicious when it has been infused for a day. An absolute must for all lovers of traditional cuisine!

Ingredients (15 ingredients)

  • 1 kg Beef shank(s)
  • 3 piece Marrow bones
  • 1 kl. Bunch of parsley
  • 3 piece Carrot(s)
  • 1 kl. Piece of celeriac
  • 1 Stange Leek
  • 2 große Onion(s)
  • 200 ml Carbonated mineral water
  • 500 g Flour
  • 5 große Egg(s)
  • 1 kg Potato(es)
  • Nutmeg
  • Peppercorns
  • Butter
  • Parsley for sprinkling

Preparation (11 steps)

Prepare broth

Rinse 1 kg beef shanks and 3 marrow bones under clear water and place in a large pot. Fill with 3-4 liters of water. Add a large, cleaned but unpeeled onion. Bring to a boil on the stove and simmer over medium heat. Skim off the resulting foam with a slotted spoon until the broth is clear.

Chop soup vegetables

Clean 3 carrots, a small piece of celeriac and 1 leek and cut into coarse pieces. Place in the mixing bowl together with a small bunch of parsley and chop for 5 sec./speed 5.

Cook broth

Add the chopped soup vegetables to the broth in the pot. Season with a good pinch of salt, nutmeg, 2-3 bay leaves and a teaspoon of black peppercorns. Let the broth simmer for about 2 hours until the meat of the shanks is soft.

Prepare spätzle dough

Thermomix® Setting

Place 500 g flour, 5 eggs, 150-200 ml carbonated mineral water and a pinch of salt in the mixing bowl. Mix into a dough for 2 min./kneading stage. The dough should flow thickly from the spoon.

Cook spätzle

Press the spätzle dough in portions through a spätzle press into boiling salted water. When the spätzle rise to the surface, scoop them out with a slotted spoon and rinse in cold water.

Cook potatoes

Peel 1 kg of potatoes, cut into bite-sized pieces and cook in a separate pot for about 20 minutes until they are cooked. Then drain.

Sauté onions

Cut a large onion into small pieces. Heat 40g butter in a pan and sauté the onions in it until light brown.

Prepare meat

Remove the shanks from the broth and let them cool slightly. Separate the meat from the bone and cut into bite-sized pieces.

Refine broth

Pass the broth through a sieve. Press the bone marrow through the sieve into the broth. Put the clear broth back into the pot and season with salt, nutmeg and pepper.

Finish stew

Add the potatoes, spätzle, meat and sautéed onions to the broth and bring to a boil briefly. 3 min./100°C/speed 1.

Serve

Divide the stew onto deep plates and serve sprinkled with freshly chopped parsley.
