Description

This apple pie is a delicious dessert that is prepared with simple ingredients. The apples are cooked in white wine with cinnamon and then baked in a pastry shell. Preparation takes about 1 hour and 45 minutes and yields 6 servings. Ideal for festive occasions or simply as a sweet treat in between.

Ingredients (10 ingredients)

  • 1 tbsp Sugar
  • 0.5 tsp Cinnamon
  • 3 tbsp White wine
  • 6 piece Sour apples
  • Butter
  • Flour
  • 1 tsp Sugar
  • 1 tbsp Flaked almonds
  • 2 tbsp Raisins
  • 1 piece Egg yolk

Preparation (10 steps)

Prepare pie crust

Prepare the pie crust as described on page 31.

Boil sugar and cinnamon

Add 1 tbsp sugar and 0.5 tsp cinnamon to the mixing bowl, add 3 tbsp white wine and bring to the boil for 3 min./100°C/speed 1.

Add apples and cook

Thermomix® Setting
7 min/194°F/Gentle stir speed/Linkslauf 194°F Reverse

Add 6 peeled, sliced sour apples to the mixing bowl and cook for 7 min./90°C/gentle stir setting/reverse rotation. The apples must not fall apart. Let cool.

Prepare plate

Grease a fireproof dish with some butter. Sprinkle some flour on a rolling pin and kitchen board.

Roll out dough

Flatten a fist-sized lump of dough by hand, sprinkle with some flour and roll out thinly. The dough must fit on the plate.

Place dough and filling

Place the dough on the buttered plate. Pile the apple filling in the middle. Do not spread it out. Sprinkle 2 tbsp of raisins over it.

Roll out second dough

Roll out a second lump of dough of the same size thinly.

Brush dough

Brush the dough around the filling with 1 egg yolk, whisked.

Place lid and decorate

Place the second sheet of dough on top as a lid. Press the edges of the dough firmly together. You can press patterns into the dough with your fingertips if you want. Cut off any excess dough. Cut a hole in the middle of the dough lid as a »chimney«.

Bake pie

Brush the dough lid with the rest of the egg yolk. Sprinkle with some sugar and 1 tbsp of flaked almonds. Bake the pie at 225°C for about 45 minutes until golden brown.
