Description

These stuffed zucchini pancakes are a delicious and simple option for a quick meal or a tasty snack. The combination of fresh zucchini with ham and melted mozzarella cheese is simply irresistible. I prepare them often because they are very versatile and can be filled with whatever you like. They are also a great way to include vegetables in the diet of the little ones. They are prepared in a short time and are perfect for any occasion. Go ahead and try them, you will love them!

Ingredients (11 ingredients)

  • 1 piece zucchini
  • 0.25 piece onion
  • 1 piece egg
  • 250 ml milk
  • 125 gr Common wheat flour
  • 200 gr Grated mozzarella
  • 150 gr Sliced cooked ham
  • 1 al gusto Pepper
  • 1 al gusto salt
  • 1 al gusto oil
  • 1 tsp baking powder

Preparation (5 steps)

Grate the zucchini and onion

Introduce 1 zucchini (approximately 200g) and 1/4 onion into the Thermomix glass. Grate for 5 Sec./Speed 5. Remove and reserve in a bowl.

Prepare the dough

In the same bowl with the grated zucchini and onion, add 1 beaten egg, 250 ml of milk, salt and pepper to taste. Mix well with a spatula. Incorporate 125 g of common wheat flour and 1 tsp of baking powder. Mix until you get a homogeneous dough.

Cook the pancakes

Thermomix® Setting
2 min/Velocidad 1/Temperatura 248°F 120

Heat a non-stick frying pan with a little oil over medium heat. Pour a ladle of the mixture into the pan and spread well to form a thin pancake. Cook for 2 Min./Speed 1/Temperature 120°C until golden brown on one side.

Fill and finish

1 min/Velocidad 1/Temperatura 248°F 120

Turn the pancake over. Add a slice of cooked ham (approximately 20g) and a little grated mozzarella cheese (approximately 30g) over half of the pancake. Fold the pancake in half to close the filling. Cook for 1 Min./Speed 1/Temperature 120°C on the other side until the cheese melts and the pancake is golden brown.

Serve

Remove the pancake from the pan and serve hot. Repeat the process with the rest of the dough and ingredients. They can be filled with other ingredients to taste.
