Description

This Covered Rice in the Poor Man's Style is a Peruvian recipe that I have adapted to make it even easier with the Thermomix®. It is a tower of rice stuffed with ground meat seasoned with ají panca, raisins and hard-boiled egg, accompanied by fried plantains and a fried egg on top. An explosion of flavors and textures! It is a perfect dish for a family meal or a special celebration. The combination of soft rice, juicy meat and the sweetness of the plantain is simply irresistible. Also, it can be prepared in advance and assembled just before serving. Go ahead and try this delight!

Ingredients (16 ingredients)

  • 500 gramos ground beef
  • 3 piece ripe plantains for frying
  • 2 piece hard-boiled eggs
  • 100 gramos black raisins
  • 2 ramas parsley
  • 1 piece red onion
  • 1 piece tomato
  • 2 tbsp ground garlic
  • 2 tbsp ají panca paste
  • 2 chorros vegetable oil
  • 4 piece eggs
  • 8 tazas cooked white rice
  • salt
  • pepper
  • cumin
  • oregano

Preparation (8 steps)

Chop the onion, tomato and parsley

Place 1 red onion in quarters in the Thermomix bowl. Program 3 sec./Stufe 5. Remove and reserve. Then, place 1 tomato in quarters in the Thermomix bowl. Program 3 sec./Stufe 5. Remove and reserve. Finally, place 2 sprigs of parsley in the Thermomix bowl. Program 3 sec./Stufe 7. Remove and reserve.

Sauté the onion and garlic

Add 2 splashes of vegetable oil and the chopped onion to the Thermomix bowl. Program 3 Min./120°C/Stufe 1.

Add the ground garlic and the ají panca paste

Add 2 tablespoons of ground garlic and 2 tablespoons of ají panca paste to the Thermomix bowl. Program 2 Min./120°C/Stufe 1.

Incorporate the tomato

Add the chopped tomato to the Thermomix bowl. Program 2 Min./120°C/Stufe 1.

Cook the ground beef

In a separate frying pan, heat a little vegetable oil over medium-high heat. Add 500 grams of ground beef, salt, pepper, cumin and oregano to taste. Cook for approximately 8 minutes, stirring occasionally, until the meat is browned and cooked.

Mix the meat with the remaining ingredients

Add the cooked meat to the Thermomix bowl along with 2 chopped hard-boiled eggs, 100 grams of black raisins and the chopped parsley. Program 3 Min./100°C/Linkslauf Stufe 1. Rectify the salt if necessary.

Fry the plantains

While the filling is cooking, fry 3 ripe plantains cut into slices in a frying pan with vegetable oil until golden brown on both sides. Remove and reserve.

Assemble the Covered Rice

In a small container, place a layer of cooked white rice, then a layer of the meat filling and finally another layer of rice. Press lightly. Place a plate on the container and carefully flip over. Accompany with the fried plantain slices and a fried egg on top.
