Description

This Castilian garlic soup is a comforting and flavourful dish, perfect for cold days. The recipe, simple and economical, takes advantage of basic ingredients such as day-old bread, garlic and a touch of paprika. I prepare it often in winter, and it is always a success. The trick is in the garlic and paprika sauce, which gives it an incomparable aroma and taste. You can add a boiled egg to enrich it and make it even more nutritious. A traditional recipe that never fails!

Ingredients (10 ingredients)

  • 1.8 litros water
  • 1 trozo chicken or its fat
  • 90 gr day-old bread, chopped
  • 1 pinch salt
  • 1 pinch saffron or food coloring
  • 1 piece boiled egg
  • 2 clove garlic
  • 2 cucharadas extra virgin olive oil
  • 1 pinch sweet paprika
  • 1 bunch parsley

Preparation (5 steps)

Boil the water with the chicken fat

Thermomix® Setting
10 min/212°F/Velocidad 1 100

Pour 1.8 litres of water into the Thermomix bowl and add a piece of chicken or its fat. Program 10 minutes/100°C/Speed 1.

Add the bread and salt

Thermomix® Setting
5 min/212°F/Velocidad 1 100

Add 90 grams of day-old bread, chopped, and salt to taste to the Thermomix bowl. Program 5 minutes/100°C/Speed 1.

Incorporate the boiled egg

Add 1 chopped boiled egg to the Thermomix bowl. Mix gently with the spatula.

Prepare the sauce

5 min/248°F/Velocidad 1 120

Put 2 cloves of garlic in the Thermomix bowl and chop for 3 seconds/Speed 7. Add 2 tablespoons of extra virgin olive oil, a pinch of sweet paprika and chopped parsley. Program 5 minutes/120°C/Speed 1.

Add the sauce to the soup

Pour the sauce from the Thermomix bowl into the soup. Stir gently with the spatula to integrate all the flavors. Serve hot.
