Description

This dish is a feast for the palate! Tender veal fillet, aromatic herb mushrooms and crispy potato wedges - a combination that is simply irresistible. I especially like to make it when guests come, because it is something special, but still not too complicated to prepare. The potatoes become nice and crispy in the oven, while the veal fillet is seared in the pan and then finished cooking in the oven. The herb mushrooms give the whole thing a fine, spicy note. An absolute highlight for any occasion!

Ingredients (11 ingredients)

  • 600 g Potatoes
  • 7 tbsp Rapeseed oil
  • 500 g Sea salt
  • 2 clove Garlic
  • 3 Stiel Parsley
  • 8 Stiel Thyme
  • 400 g Veal fillet
  • 1 tsp Butter
  • 100 ml Dry white wine
  • 200 ml Veal stock
  • 100 ml Cream

Preparation (10 steps)

Prepare potatoes

Wash potatoes, cut into wedges and spread on a baking sheet lined with baking paper. Brush with 3 tbsp oil and season with sea salt. Roast in the preheated oven (180 °C top/bottom heat) for approx. 40 minutes, turning occasionally.

Prepare mushrooms, garlic and herbs

Clean mushrooms and halve lengthwise. Peel garlic. Wash parsley and thyme and shake dry. Set aside 1 tbsp parsley.

Chop garlic

Place garlic cloves in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Chop herbs

Place parsley (except for 1 tbsp) and thyme in the mixing bowl and chop for 3 sec./speed 5. Transfer and set aside.

Sear veal fillet

Pat the veal fillet dry and rub with salt. About 20 minutes before the end of the baking time of the potatoes, sear the veal fillet in 2 tbsp oil from each side for about 1 minute. Add 1 tsp butter and swivel. Place the fillet in a small casserole dish and cook in the oven for about 12 minutes. Remove and roll in the chopped herbs.

Sauté mushrooms and garlic

Add 2 tbsp oil and the chopped garlic to the mixing bowl and sauté for 3 min./120°C/speed 1. Then add the halved mushrooms and sauté for another 3 min./120°C/speed 1.

Remove mushrooms

Remove the sautéed mushrooms from the mixing bowl and set aside.

Prepare sauce

5 min/194°F/Speed 2 90

Add white wine to the mixing bowl and simmer for 2 min./100°C/speed 1. Add veal stock and cream and simmer for another 5 min./90°C/speed 2.

Add mushrooms and season

Thermomix® Setting
1 min/194°F/Speed 1 90

Put the mushrooms back into the mixing bowl and heat for 1 min./90°C/speed 1. Season with salt and pepper.

Serve

Sprinkle the sauce with the mushrooms with the remaining parsley and serve with veal fillet and roasted potatoes.
