Description

These stuffed zucchini are a light and aromatic dish that is perfect for summer. The rice noodle filling with tomatoes, olives and fresh herbs makes the zucchini a true taste experience. I love how easy this dish is to prepare and how well it can be prepared in advance. The zucchini are not only delicious, but also a real eye-catcher on the plate. A great vegan dish that also convinces meat eaters! Vary the filling as desired with other vegetables or herbs.

Ingredients (13 ingredients)

  • 100 g Rice noodles (Kritharaki)
  • 4 piece small Zucchini
  • 4 piece Tomatoes
  • 4 tbsp green Olives
  • 1 piece Onion
  • 2 clove Garlic cloves
  • 1 cm Turmeric
  • 2 tbsp Olive oil
  • 1 Zweig Thyme
  • to taste Salt
  • to taste Pepper
  • 100 g Sweet paprika powder
  • 300 ml Vegetable broth

Preparation (8 steps)

Prepare rice noodles

Cook the rice noodles according to the package instructions until al dente. Meanwhile, preheat the oven to 175 °C.

Prepare Zucchini

Halve the zucchini lengthwise and use a spoon to scoop out the pulp, leaving a small rim. Set aside the scooped-out pulp.

Prepare tomatoes and olives

Core the tomatoes and cut them into small cubes together with the olives. Set both aside.

Chop onion, garlic and turmeric

Peel the onion and garlic cloves and place them in the mixing bowl together with the turmeric. Chop for 3 sec./level 5.

Sauté vegetables

Add 2 tbsp olive oil and sauté for 3 min./120°C/level 1.

Add zucchini pulp and tomatoes

5 min/248°F/Speed 1 120

Add the finely chopped zucchini pulp and the diced tomatoes to the mixing bowl and sauté for another 5 min./120°C/level 1.

Mix filling

Add the cooked rice noodles, olives and thyme leaves to the mixing bowl. Season with salt, pepper and sweet paprika powder and mix for 10 sec./reverse/level 2.

Fill and bake zucchini

Fill the rice noodle mixture into the zucchini halves and place them side by side in a baking dish. Pour the vegetable broth into the baking dish and bake everything for about 20–25 minutes in the preheated oven.
