Description

This beetroot soup is a hearty and warming dish that tastes particularly good in the cold season. The combination of the slightly sweet beetroot and the spicy bacon makes this soup a real taste experience. I like to make it when I want to cook something hearty and healthy at the same time. Preparation with the Thermomix® is super easy and quick. It goes well with boiled potatoes or a piece of fresh bread. A dollop of sour cream rounds off the dish perfectly. Ideal for a cozy lunch or dinner!

Ingredients (12 ingredients)

  • 1 kg Beetroot
  • 300 g Smoked pork belly or diced ham
  • 2 piece Onions diced
  • 1.5 l Vegetable broth
  • 1 container Sour cream or sour cream
  • 1 tbsp Marjoram leveled
  • Thyme
  • Salt
  • Pepper
  • Lovage rubbed or ground
  • Water possibly
  • Boiled potatoes

Preparation (7 steps)

Prepare beetroot

Wash the beetroots and cook in a pot with water for about 40 minutes until soft. After cooking, peel off the skin and roughly grate the tubers on a kitchen grater. Rubber gloves are recommended to avoid discoloration.

Chop bacon and onions

Cut the pork belly into small cubes. Peel and quarter the onions and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté bacon and onions

Add the bacon cubes to the onions in the mixing bowl and sauté for 5 min./120°C/speed 1.

Cook soup

20 min/212°F/Speed 1 100

Add the grated beetroots and vegetable broth to the mixing bowl. Add some water if necessary, depending on the desired consistency. Cook for 20 min./100°C/speed 1.

Spice soup

10 sec/Speed 3

Add marjoram, thyme, salt, pepper and lovage to the mixing bowl and stir for 10 sec./speed 3.

Refine soup

Thermomix® Setting
5 sec/Speed 2 Linkslauf Reverse

Mix the sour cream in a separate bowl with a small amount of the hot soup. Then add the sour cream mixture to the soup in the mixing bowl and stir in for 5 sec./speed 2 reverse.

Season soup

Season the soup with a little lemon juice (approx. 1 tsp). The soup is seasoned correctly when you don't want to stop tasting it.
