Description

This piquant chicken soup with tofu is real soul food! I especially like to make it when it's cold outside. The combination of tender chicken, crunchy vegetables and spicy tofu is simply unbeatable. A dash of vinegar and soy sauce give the soup a pleasant acidity and depth. The homemade egg pancake strips make the soup something special. Perfect as a warming lunch or dinner and easy to prepare. If you like it even spicier, you can of course add more chili!

Ingredients (11 ingredients)

  • 2 piece Chicken leg(s)
  • 1 bunch Soup vegetables
  • 1 piece Bell pepper(s) red
  • 3 Stange Onion(s) young
  • 100 g Smoked tofu
  • 1 Ei(er) Egg(s)
  • 1 Schuss Vinegar
  • 4 tbsp Potato starch
  • 2 tbsp Oil Sesame oil
  • 125 ml Soy sauce
  • 3 tbsp Oyster sauce

Preparation (8 steps)

Chop soup vegetables

Thermomix® Setting

Cut the soup vegetables into coarse pieces and place in the mixing bowl. Chop 5 sec./level 5.

Cook chicken soup

Thermomix® Setting
30 min/212°F/Speed 1 100

Add chicken legs and chopped soup vegetables to the mixing bowl. Fill with 1.5 liters of water and cook for 30 min./100°C/level 1.

Strain soup and prepare meat

Pass the soup through a sieve and collect the broth. Allow the chicken legs to cool, remove the skin and bones and cut the meat into small pieces.

Prepare vegetables

Cut peppers and young onion into miniature cubes (approx. 3 x 3 mm).

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Put sesame oil in the mixing bowl and add pepper and young onion cubes. Sauté 3 min./120°C/level 1.

Finish soup

5 min/212°F/Speed 1 100

Add the collected chicken broth, chicken meat and tofu cubes (3 x 3 mm) to the mixing bowl. Add 0.5 chili peppers without seeds and let simmer for 5 min./100°C/level 1. Season with salt, vinegar and soy sauce.

Prepare egg pancakes

Beat the egg well. Bake thin pancakes in a coated pan without Thermomix. Tear these into small pieces.

Thicken soup

Thermomix® Setting
2 min/212°F/Speed 2 100

Add egg pancake strips to the soup. Stir potato starch with some water in a separate container and add to the mixing bowl. Simmer for 2 min./100°C/level 2 until the desired consistency is reached.
