Description

This savory beef vegetable soup is a real soul warmer! I especially like to make it in autumn and winter, when it's cold outside. The beef is braised until tender and the vegetables give the soup a great sweetness. The preparation is a bit time-consuming, but it's definitely worth it. The soup is also great to prepare in advance and tastes almost even better the next day. A dollop of sour cream or crème fraîche also goes perfectly with it. Simply delicious!

Ingredients (18 ingredients)

  • 500 g Beef goulash
  • 1 piece large Onion, finely diced
  • 2 clove Garlic, finely diced
  • 2 tbsp Clarified butter
  • 800 ml Beef broth
  • 150 ml Red wine
  • Salt
  • Pepper
  • 3 tsp Paprika powder, hot
  • 3 tbsp Paprika powder, mild
  • 1 tbsp Tomato paste
  • 2 tbsp Sugar
  • 4 Zweig Marjoram, the leaves of it, roughly chopped
  • 2 piece Bay leaves
  • 3 piece large Potatoes, diced
  • 1 piece large Carrot, sliced
  • 2 piece Bell peppers, finely diced
  • 0.5 bunch Parsley, finely chopped

Preparation (6 steps)

Chop onion and garlic

Thermomix® Setting

Put the onion in coarse pieces and the garlic cloves into the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add the clarified butter and sauté for 3 min./120°C/speed 1.

Sear and season meat

5 min/248°F/Speed 1 120

Add the beef goulash and sear for 5 min./120°C/speed 1 without the measuring cup. Use the spatula to distribute the meat evenly. Then season with salt, pepper, paprika powder (hot and mild), tomato paste and sugar.

Deglaze and braise

60 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Deglaze with beef broth and red wine. Add marjoram and bay leaves. Braise for 60 min./100°C/gentle stir setting/reverse rotation.

Add vegetables and cook until done

20 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add potato cubes, carrot slices and bell pepper cubes and simmer for another 20 min./100°C/gentle stir setting/reverse rotation until the vegetables are cooked.

Stir in parsley and serve

10 sec/Speed 1/Linkslauf Reverse

Add the chopped parsley and stir in for 10 sec./speed 1/reverse rotation. Serve the soup hot.
