Description

This beetroot and apple gazpacho is an explosion of fresh and sweet flavor, perfect for hot summer days. Cooked beetroot gives it a vibrant color and an earthy touch, while apple adds a natural sweetness and a crunchy texture. It is a recipe that I make often because it is very easy to prepare and always surprises my guests. Also, it is a healthy and refreshing option for any meal. Go ahead and try this delicious cold soup! You can add a little avocado for a creamier version or experiment with other vegetables such as green pepper or onion.

Ingredients (9 ingredients)

  • 2 piece cooked beetroot
  • 3 piece ripe tomatoes
  • 1 piece apple
  • 1 clove garlic
  • 1 trozo cucumber
  • 1 pinch salt
  • 1 chorro olive oil
  • 1 chorro vinegar
  • 1 pinch pepper

Preparation of the vegetables

Wash the tomatoes, cucumber and apple well. Peel the cucumber and the garlic clove. If desired, peel the tomatoes as well. Cut the tomatoes, cooked beetroot, apple and cucumber into medium pieces.

Crush the ingredients

Put the chopped tomatoes, beetroot, garlic clove, apple and cucumber in the Thermomix glass. Add 1 liter of cold water. Crush for 1 Min./Stufe 10.

Add the dressing

Thermomix® Setting
10 sec/Speed 3

Add salt, pepper, olive oil and vinegar to taste. Mix for 10 Sek./Stufe 3.

Cool and serve

Pour the gazpacho into a bowl and refrigerate for at least 2 hours. Serve cold, garnished with apple pieces.
